Help give me culinary inspiration

Hi all,

I went a little crazy at the grocery store on Sunday and now have a bunch of ingredients, but no real plan. I thought I would come up with one by now, but no such luck. This is what I have:

1 lb pepper steak
1 zucchini
1 small eggplant
1 bunch of leeks
1 container cremini mushrooms
a few shallots
3 white sweet potatoes
garlic
2 crowns of broccoli
red cabbage
1 ear of corn
baby carrots
2 avocados
1 mango
1 lemon

I have an assortment of rice, pasta, oils, vinegars, beans, spices, and other pantry staples.

There might be a few other things, but that's basically it. The only thing I can come up with is a stir fry, but that seems ho-hum. I'm looking for ideas that use up some or all of the ingredients - I'm drawing a blank.

sear the steak, put aside. deglaze pan with wine & saute up some shallots, mushrooms & garlic. If you use white wine then add some capers & dijon. If you use red add some rosemary or herbs. Make a little sauce to top the steak.

do a light "stirfry" with the veggies for your side veggie dish (maybe a bit of garlic, lemon & olive oil)

roast the sweet potatoes or make up some rice with your beans. rice & beans.

roasted eggplant, zucchini & leeks .....tossed with olive oil, shallots & garlic

broiled pepper steak with avocado, mango salsa?

I would throw it together in a pot pie. Pie is always a good idea.

what is pepper steak?

it's really just steak that is cut into strips (I guess because it is commonly used to make "pepper steak" it is called pepper steak, but I don't know).

Some kind of southwestern salad, the avacado and corn witht the steak woudl be great.

Sounds like good quiche guts to me!

Oil a small baker - grate the zucchini. - whip up a couple of eggs -add the zucchini to the eggs with some grated parmesan cheese

Voila - a frittata.

Cook a cubed potato wiith some finely chopped shallot. Saute your mushrooms and add to the potato and shallot. Puree and add 1/2 and 1/2/ and reheat. . A wonderful cream soup for a first course. Don't forget salt and pepper. The broccoli will work in that recipe as well.

For a nice side dish, cooked carots simply seasoned with butter, salt and pepper.

Definitely stir-fry. I like to add just a little soy sauce, chili sauce, and a LOT of plum sauce to mine! Not sure about the mango and avocado though...some kinda of salsa to snack on? That's the Texas girl talking - salsa and heat!

you could make sweet potato leek soup.

pepper steak, egg plant, zucchini, mushrooms for a kebab.

mango, avocado, lemon, garlic, and roasted corn and you have salsa.

pepper steak, cabbage and you can do egg rolls of a sort if you get some wrappers (or make them I guess)

Make a busy stew. or steak with a veggie ragout to top it.

Try to remember what you were thinking when you were shopping. I often see something and bring it home, later on find something to do with it. But no one should tell you what to do with it. Your own imagination needs the exercise.

I've been there before, stuck in a rut and only able to come up with combos that seem dull. My advice? Grill those veggies, roast up some garlic and marinate and pan fry the steak. then assemble all into a pizza.

Alternatively all those veggies, broc and corn included could make a delicious slaw of some sort.
