Frozen carrot dilemma

I went to Costco a few months ago and they had a very good deal on organic carrots. The problem was that the bag was enormous. Usually I buy only what I know will be consumed while it's still fresh, but I decided to buy this one cubic yard of carrots anyway, chop and blanch them and then freeze them in zip top freezer bags.

Despite blanching, they still didn't freeze particularly well and now I have three one quart freezer bags filled with somewhat squishy carrots.

Can they be salvaged? The only idea I can come up with for them is a carrot soup, but that is sounding pretty boring. Can anyone think of anything more exciting? Or do you think they should just be tossed? I hate to waste them....
