flourless orange cake
Has anyone ever made a flourless orange cake? I need to make a cake, and baking is boring for me, so I have been intrigued by this flourless orange cake recipe. It actually uses 2 boiled and pureed whole oranges and almond flour. I don't want to end up with a sour orange cake. Any advice? I did buy thin skin oranges, but they're not seedless. I'll have to dig those out after boiling. I have chosen a semi-sweet to bittersweet chocolate ganache for the top, with a bit of dark rum added. If the final ganache is too bitter for my taste, or for the cake, can I simply add some sugar to the ganache, and what kind? I'm not a baker, help!
