Defrosting Rice
After mis-interpreting the Spanish directions on a package of rice the other day, I ended up making about three times as much as I wanted. Remembering that my college roommate used to freeze rice, I popped the rest of it into the freezer. Now, however, I realize I have absolutely no clue how she actually defrosted it. Anyone have any clues? Should I put it on the stove? Microwave? Just leave it out? Covered? Uncovered? I'm stuck!

I would let it thaw on it's own...IF you can't wait and you use the stove I would add a little water to help separate the grains and keep it moist. If it's frozen in plastic wrap or a freezer bag it should be fine to defrost in the microwave.

Hm it's in tupperware, and I'm not going to make supper for a couple of hours, so I think I'll leave it out, then use the stove when I'm ready to start cooking. Should I cover it on the stove? Or will that just cook the grains more?

I guess you could, you really just want to give it a light steam to heat it and loosen the grains. It won't be complicated, I promise.

Or just let it defrost in the ref like you would with seafood.

It was frozen in tupperware, and I couldn't get it out of the container, so I ended up nuking it with the cover on, and it worked out okay, if a little mushy. Thanks guys!

I freeze and reheat rice on a weekly basis. Requires very little thinking, and no need for a stove or worry. Put cooked rice in a microwave-safe tupperware; freeze. When you want to eat it, loosen the lid, give it a little bit of water if it's been frozen more than a day or two (as it will have dried out more), and microwave til it's heated through and rice-like again. Covering it with the lid in the micro keeps it from steaming all its water straight into the air. Easy!

My Asian mother puts leftover rice in the fridge. It dries out a little, but microwaving it with a few drops of water brings it right back.
Steaming it also works.

When I have leftover rice from Chinese takeout, I like to reheat it with a few drops of sesame oil, it adds back some of the moisture that seems to disappear in the fridge.
