Best recipe for wontons
I'm looking for ingredients to put in a wonton mix. What types of meat/veggies do you use?

My basic filling is: 1/2 lb ground pork, a small finely minced garlic clove, a finely minced green onion and 3 very finely minced water chestnuts, soy sauce & black pepper to taste.....makes filling for 50 wontons (one package of wonton wrappers). If I will be steaming the wontons sometimes siu mai style I add a very finely grated carrot for a bit of color & sweetness.

I like to use chopped pork and/or shrimp, rehydrated dried black mushrooms, waterchestnuts, ginger, garlic, scallions, light soy sauce and sesame oil. Salt and white pepper to taste. Sometimes I'll add a little five spice powder and dried tangerine or orange peel. Chopped dried, salted turnip is also good in there!

I like them with big chunks of shrimp.
To make them a bit healthier, sometimes I add minced napa cabbage or mashed up firm tofu or ground turkey.
shiitake mushrooms are a must
i also add cornstarch (about a Tablespoon for the batch) this makes it hold together nicely and makes it "bouncy" (my mom's term)

My recipe consists of ground pork, shrimp and vegetable (watercress, or baby bok choy). The vegetable are blanched, let cool then minced before adding it to the rest of the ingredients. I prefer steaming the wontons then add to broth so the wonton wrappers are not easily broken from boiling.

I'll just bet that Italian sausage, casings removed, would make an excellent filler for these little buggers.

mine's pretty much the same as kathyvegas, but i do 1/2 shrimp, 1/2 pork. and you MUST make the wrappers!

Catch as catch can, but, I tend to always have frozen, large uncooked shrimp around. I brieflly cook them in broth with hunk of ginger & halved galric cloves & dried red peppers, strain, mince and use the same array of goodies largely listed in the bulk of comments.
@G.O.M...I've made savory ones as well with hot suasage & of course they rule...it's sausage!!
