Awesome Hack for leftover salad

My mother in law has a paticular genius when it comes to using up leftovers. The other day my father in law made too much salad (mixed greens + italian dressing with crutons0 and it was already overdressed. I was tempted to just throw it out but instead my mother in law blended it with some v8 to create a gazpatcho! I enjoy eating it on chips with a little hot sauce. yum!

Almost any leftover salad can be stuffed into a baked potato kumpir-style to create a pretty solid lunch.

I recently drank salad -- lettuce, carrots, tomatoes, cucumbers, radish, and mint. It's not bad...just different.

I had to try it since I bought a drink recipe book recently. There were sections of drinks using wheatgrass, bean sprouts, rhubarb, peas, and a host of veggies, as well as the usual blend of fruits like passion fruit, papaya, etc.

Ina Garten uses her leftover salad in a similar way...she blends it all together and adds it to her hot soups...the greens and vinegar add great flavor to the soups.

make pesto out of spinach and argula salad....or maybe some chimichuri sauce....nomnomnom.

That is super creative! The first thing I thought of for leftover salad was using it as a taco filler (paired with a meat, cheese and sour cream of course).

That's what I do with the leftovers make a soup.

I make left-over dressing... mix the leftover salad in a blender with olive oil, vinegar, salt and pepper and some garlic/herb seasonings and you have dressing for your next salad...
