Advice on making ice cream without a machine?

I'd really like to make ice cream without a machine and was wondering if anyone had tips/advice based on past experience? I've followed David Lebovitz's directions on his sites, but ended up with somewhat grainy ice cream. Also - I'd like to make ice cream based on soy or coconut milk, and hoping someone could point me to recipes or websites? Thanks!

(I'm avoiding buying a machine - I think either end up using it too little or too much )

i once had a little hand crank gadget that made pretty nice ice cream, can't remember the name of it though, it worked well - until someone cranked it too hard and broke it.

the cuisinart one (around $50-75) makes really good ice cream, i think,
never disappointed. i don't use it all of the time, but come summer, it's nice to make some good sorbets and fruity ice creams.

The only think I can think of is a kitchen-aid mixer and a jug of liquid nitrogen....other than that, if you don't want granita-type ice-cream, you will need a machine suited for the purpose.

this month's cooks country has a really intriguing recipe for chocolate ice cream that you can make without a machine. i think it uses whipped cream and sweetened condensed milk.

Although I've never tried this approach, I've seen it on TV shows for senior day care centers and cub scout and girl scout meetings. Don't know if it works or what the texture is, but it might be fun to try once. Actually, I think this link has the coffee can method and a plastic bag method.

We went last summer (?or fall?) to the Top Chef Tour and Richard Blais made ice cream in the Kitchenaid. He used smashed up dry ice and some basic type ice cream base he has made with cream and sugar. It had a slightly 'fizzy' quality if you got a tiny bit of the dry ice but other than that it did a pretty good job. You could give that a shot.

By the way, he made blue cheese ice cream - I didn't mind it, my husband less so. :) Lately, I've been dreaming of some sort of tequila margarita ice cream...maybe on on Memorial Day! Have fun.

I've made 3 types of ice cream at home once. It was relatively easy, just not as creamy.

I just posted a recipe for iced lemon cream on my blog. The recipe can be modified for other flavors, as well. It is not grainy in the least, but is very creamy and smooth. There is no ice cream maker involved, and it only takes a few minutes to prepare.

I've successfully made non-grainy custard ice cream without a machine. Just throw in a couple Tbsp of booze and it won't be able to freeze as quickly or as hard. Stir it thoroughly every hour until it's hard enough to scoop.
