Your favorite tahini salad dressing recipe?
My broke self was lamenting the lack of my favorite dressing to go with the lovely new spring green beans and artichokes when I realized that its first ingredients are canola oil, water, tahini, cider vinegar, soy sauce, lemon juice, and sea salt, all of which I currently have. Does anyone have an opinion on ratio, or a variant they are fond of? I think basic vinagrette rules apply, considering its nutritional information, but I'd love to hear other tahini dressing recipes- I'm crazy for sesame seeds and just bought a jar of toasted sesame butter. Thanks!

I usually approximate when I'm making dressings, but I'm pretty sure my tahini dressing is about 1 part tahini : 2 parts lemon juice : 4 parts olive oil, with one small clove of garlic (very finely minced) for every tablespoon of tahini used, and plenty of salt and pepper to cut through the richness of the sesame paste. My favorite method of consuming this dressing is on a salad of arugula, cilantro, chickpeas, and spiced (I usually use a mixture of cumin, garam masala, and curry powder) roasted carrots.

The only thing that I would add to ChristineB's recipe is a little warm water t thin the dressing a bit. It's fabulous on a dish of warm quinoa, chick peas, and chopped red onions, all tossed with a bit of cilantro.

I prefer to use some plain yogurt and only a little bit of olive oil--obviously healthier and, I think, tastier. Don't skimp on the tahini itself, or the lemon juice and garlic. Some warm water is definitely helpful. The soy sauce is a nice addition, although just a dash goes a long way. I don't have exact ratios because I make this dressing in the blender, tasting as I go along and until I reach the flavor and consistency I'm after.

Try this: purée tahini, water, lemon juice, minced garlic, and 1/2 teaspoon salt in a blender until smooth, about 1 minute. (Add a bit of water if sauce is too thick.)
And definitely try this recipe, it's so delicious: Roasted Kale & Potato sald w/tahini dressing, but make sure to roast the kale for longer than they recommend.
