What to do with Fennel Fronds???

I just recently started participating in a CSA and among the things included in last week's basket was a fennel bulb. I have eaten fennel and seen fennel at the store, but never actually brought one home to cook with it.

I searched some recipes and I know what to do with the bulb, but throwing away all those stalks and fronds seems so wasteful...

What should I do with them? Do you use them as you use dill? Or should I just throw them away??? Please advise...

You use them like you would dill, but obviously they have fennel flavor, not dill. They're beautiful, and make for a striking and delicious garnish, with fish for example. The stalks can be used as you would celery. Aside from the core in bulb (which you can save for making stick) there is nothing to waste with fennel.

try putting the fronds in a bottle of vodka, let it soak for anywhere from 2 wks to 3 mths, strain and you have a great remedy for anytime you have overindulged a little.

Use it to garnish the dishes you plan to make. Looks really pretty.

I usually just use them for garnish, but simon's comment made me think that the fronds and arms(?) would be a good bed to roast some fish on....

I use them as you would dill...they are great in chicken salad! You could also nibble on them as is....kinda like parsley....as a breath freshener!
They are good for flavoring in soups, stews, tomato sauces....use them as you would an herb.
Of course if you don't feel like using them in any of the above....toss them in the compost bin! As long as you compost, nothing goes to waste!

When I buy a bulb of fennel, any fronds that don't get used get very coarsely chopped and thrown in a freezer bag. Then, when I make homemade stock I have some fennel on hand to add to the pot. I love the depth of flavor a little fennel brings to the party.

love all your ideas... specially the one about freezing it for making stock.

@huneybumper - the flavored vodka idea is to overindulge with or to drink AFTER you've overinduldged? how much should one person take? a sip? interesting idea...

thanks a lot.
