Vegetarian Passover Mains

I'm having a lot of people over for a semi-traditional non-Seder Passover dinner. I'd like to offer something vegetarian, other than potatoes and salad, and I am completely drawing a blank! A few years ago I made a mushroom torte, but I can't find the recipe anymore. Do you know of anything similar that's tried and true? Or do you have other favorite vegetarian Passover dishes?

How about some poached salmon with dill sauce, or a broccoli knish? Let me know if you need recipes!

You might want to experiment with it first, but maybe a matzo-meal-crusted eggplant parmesan?

You might search under dairy Passover dishes... every meal doesn't have to have meat in it, after all...

I'm sure you could find a recipe for a vegan or vegetarian kugel ... maybe try vegweb.com?

How are you making potatoes, if at all? Potato kugel or as Hillary suggested, knishes, may be a good idea. Otherwise, since you're talking "semi-traditional", you can take pretty much any vegetable that you like - for our Seder dinner, I made, among other things, stir-fried baby bok choy, caramelised leeks, haricot verts with miso butter (nobody at our table minded beans in any way) and lemon & pepper roasted asparagus. You could toss cauliflower florets with sea salt, dry mustard and olive oil and roast them, it's always a big hit.

Other options - quinoa with whatever you like, spaghetti squash or sweet potatoes.

potato kugel is always a good idea. we had brussel sprouts with tomato at our seder.
and keep some matzo balls out of the soup. i've never met anybody who doesn't like matzo balls.

I'm not Jewish, so you may want to double check to make sure all of these ingredients are okay to eat, but I tried this once and it's very good:

It's a matzo ball soup made with vegetable broth instead of chicken broth and potatoes instead of butter and eggs.

our seder this year had: vegetarian matzoh ball soup (used eggs and vegetable oil for the balls), fennel and orange salad on bed of mixed greens, quinoa with cranberries and walnuts, cauliflower and leek gratin with three kinds of cheese, and red and gold roasted beets in a honey-lemon-tarragon dressing - except for the matzoh balls and the gratin, all of it could be served at the same time as meat, and it's all definitely kosher for passover. i made tons hoping i'd have leftovers to get me through the week, but most of it was devoured in minutes (boys in their twenties are always hungrier than they look...especially after a couple of glasses of wine...)

I went to a meal that had quinoa salad with veggies, cheese blintzes with apricot jam, matzah lasagna, lox, matbucha, eggplant caponata, etc. It was amazing.
