Uses for Fried Eggs

I've recently become obsessed with fried eggs with very runny yolks. I'd like to go beyond the conventional breakfast applications and the occasional frisee aux lardons and discover some new uses for them. I recently cooked a spicy cuban black bean soup and topped it with a runny fried egg. The creaminess of the yolk really mellowed out the soup. It was delicious.

I think there are a lot of Asian recipes that call for a fried egg on the side. I've been meaning to try this Asian-inspired Serious Eats recipe for a couple of weeks:

I'm kind of obsessed with fried eggs to. I sometimes just put them in a sandwich. My parents were pretty broke when I was growing up and one of our staples in the kitchen was fried egg sandwiches. It's still one of my favorite comfort foods; fried egg on toasted bread with mayo, ketchup, and hot sauce.

Also, I eat this thing all the time: roast some potatoes, toss them with cooked Mexican chorizo, top with a runny, fried egg, and garnish with chopped green onions. It's SO good.

Not fried but yolk with runny egg applies - Eggs in Purgatory. I love this dish but I find it's one of those things you love or hate (no in between). Heat 1 cup of marinara or puttanesca in a small saute pan (something tomato-y, not a ragu). With the back of a spoon, make 2 little "dents" in the sauce and crack 2 eggs into them. Cover the pan and with the heat on a low simmer, cook the eggs till done. Do not overcook or you blow your runny egg thing.

I had a salad that was a deconstructed "chef's" salad using mesclun, crisped prociutto, parm shreds and yes, you guessed it, topped with a soft-centered egg (can't remember if it was poached or fried). It was delicious and not heavy like a traditional chef's salad.

Toast some crusty baguette, drizzle on some olive oil, add a couple of slices of roasted red bell pepper, grate some parm on it, top with a fried egg. It makes a nice light lunch or dinner with or without a salad or soup.

I second bibimbap.
Also yummy on nasi goreng (Indonesian fried rice).

I also really like a fried egg on top of a cheeseburger. It's is so much better than one might think.

Good breakfast that is good anytime: chiffonade some kale or collards, sautee with olive oil, salt, and a bit of garlic; serve fried eggs over bed of greens with a buttery piece of wheat sourdough toast, or serve the greens/eggs over brown rice w/ shoyu and sriracha. Not really company food, but a fantastic and healthful comfort meal!

Also can be done in a sandwich version - stack egg + greens on buttered roll/toast/English muffin w/ goat cheese, freshly ground pepper and (key ingredient) chopped chives. So delicious. You can dress this version up pretty nicely on the plate w/ a side salad/other veg garnish, so it could be served to guests.

i had a wonderful salad in austria that consisted of tartly dressed greens with bacon and a fried egg. it was called a farmer's salad, i think.

I like to make homemade black bean cakes and put them on a bed of lettuce and top with a fried egg and some pico. We do this quite often.

I'll second cheeseburgers and eggs in purgatory.

My family has them on leftover pasta and rice. Add whatever condiments you like.

I do what @malenky does too, with the spicy black bean burger with fried egg! But, I thought I was super creative and inventive...but I guess great minds really do think alike =) I use sliced avocado or a schmear of guac.

@ therealchiffonade - you beat me to it AND educated me! I often put a fried egg over my tomato based pasta dishes because I adore the rich creaminess it affords. I never knew it had a name. Eggs in Purgatory is a perfect moniker! Thanks!

Yes, a fried egg on top of roasted or sauteed veg is delicious!
Asparagus, definitely! Kale, for sure!

i've also heard of people putting a fried egg on a slice of pizza, altho i can't say i've had that myself.

I like fried eggs on enchiladas as a great way to use up leftovers. If I don't have enchiladas, huevos rancheros is good too and is the absolute perfect dinner for one.

@gastronomeg, I've had a thin-crust pizza with an egg on top.
I think they put an raw egg when the pizza was mostly done, so the egg was cooked but the yolk was still runny. It was very tasty.
I've also heard of bacon egg pizza.

Eggs in purgetory just with a picante sauce....fried eggs, hard boiled pouched...well I guess you can say any way is fine for me!!

Mexican corn tortillas and runny eggs were made for each other. I like to sautee black beans, chopped tomatoes/peppers/onions/cumin/garlic, put it on top of a corn tortilla with some shredded cheddar, top with said egg, add a top tortilla, broil just long enough for the cheese to melt.

Caesar Salad with a nice runny yolked egg.

Same for roasted vegetables (this is one of my favorite lunches).

i had a pizza at otto that was tomato sauce, pecorino (i think) and a lightly cooked egg. it was the most delicious thing i have had there, check the website to see if they have the exact cheeses, but that would be a wonderful use.

On everything!
- On Cuban Picadillo (spiced ground beef) and white rice
- On Thai Curry noodle soup
- On roasted asparagus
- Definitely on creamy polenta (maybe with some truffled breadcrumbs)
- Over spaghetti with olive oil, garlic, red chili flakes and Parmesan

I'm am truly obsessed with fried eggs and am a firm believer that a fried egg makes everything better!

There is nothing better than a fried egg over cheese enchiladas with red sauce and a side of rice to soak up the delicious runny yolk.

Fried eggs over spinach with lots of red pepper flakes, it's my "fend for yourself night" meal.

I wouldn't turn down a fried egg with any meal.

yep, I like croque madames (with a tomato too, which I've seen called Croque Savoyard, but I'm not sure if that's a common phrase.), also in crepes.

I recently had one on top of oatmeal with some scallions and soy sauce and it was good. Plus my friend just introduced me to the best thing at Ollie's (the chinese chain in NY, if you live there)--scallion pancakes with a fried egg on top! It was amazing!

Egg in a hole, oh, and I like yellow rice, black beans, and an egg on top.

One of my Sunday morning favorites is eggs Florentine...basically creamed spinach with a poached or fried egg on top (and parmesan cheese on top of that).

My version of a benedict= runny centered egg over oniony potato pancake with hollandaise. Maybe some toast for any extra goo that needs to be mopped. :P

One of my absolute favorite ways to eat a fried egg is to toast day old italian bread slices, then rub them with a piece of raw garlic. You take the "garlic bread" and ladle on some extra thick tomato sauce, then top it with a fried egg, parmesan cheese, and lots of black pepper!!! Its great for a leftover type breakfast and is even hearty enough for a lunch. I like mine with the egg fried firm but Im sure its just as good with a runny egg. Oh and Giada does a version of this on her show, but its common in a lot of italian households with school aged kids.

On ramen and udon. A tiny change from the soft poached egg on ramen/udon. A heartier broth would take well to fried eggs.

A favorite: Chinese sausage claypot rice topped with a fried egg with a gooey yolk.

I'd go for fried eggs benedict!

On top of noodles with butter and parm.

On top of a stack of pancakes.

On top of some crispy slices of polenta with some sauteed mushrooms.

@therealchiffonade, I just followed your recipe for Eggs in Purgatory, and all I can say is what took me so long to find this food?! I poured it over pasta and am happily eating it now. Thanks for posting about it!

Put a fried egg over your steamed spinach side dish! It's yummmyyyy. They're also great in salads.
