Thailand Night Market Spicy Fried Chicken?
Hi all. Does anyone know the seasoning used in the fried chicken at the night markets in Thailand. It was soooo tasty. I would like to make some — perhaps using the Scott Peacock's and Edna Lewis's Miraculously Good Fried Chicken recipe as a guide?

my mom is thai, and she used to marinate it in ginger, garlic soy and cilantro. then wrap it in pandan leaves and deep fry it.
i've also seen it marinated overnight in a paste of garlic shallots, lemongrass, chiles, tumeric, kafir lime leaves and coriander. cover with coconut milk and then fry.

@dmarina: Thank you. I am looking for a breaded fried chicken though, but these still sound awesome, I'm going to try the 2nd one for sure!

i guess i didn't finish my thought! i was thinking you do the paste & coconut milk marinade like you would do the buttermilk soak with traditional fried chicken, before you bread & fry it. or else add the spices to the breading?

You just made my day, Marshmallow! I think this is the one I was looking for however if I wanted to soak the chicken in either coconut milk or buttermilk would I do that first overnight and then marinate in the spices for hours, then coat with flour to deepfry? I think so.
And dmarina, I am going to try yours too with the suggestion you made.
