Sunrise Breakfast for 80 people

I am doing a breakfast for 80 people following a church service on Easter morning. I'd like to do the traditional egg bake casserole can I double or triple the recipe and do it in a electric roaster to save room in my oven to bake cinnamon rolls? Do you have any other suggestions? I've never done this before and am a little afraid to try it out on 80 people at 9:00 AM :)
My menu if I can figure out the logistics is Egg bake casserole, cinnamon rolls, fruit, bagels, hard boiled eggs, juice, coffee, tea and milk. But I'll take any suggestions.

You want to keep eggs hot for 80 people!?!

Maybe people with more catering experience will disagree but I think you're crazy!

I would bake the rolls beforehand and maybe include some doughnuts, scones, and quick breads, and some cold salmon and other more hearty and savory cheese spreads like veggie cream cheese.

If you must have something hot, maybe waffles, which hold better than eggs.

If you must have eggs...I would recommend perhaps making an egg salad with cream cheese instead of mayo and serve with fresh croissants. I agree with Heart of Glass...the casserole sounds a bit of a disaster, but I wish you the best!

If you are really set on making eggs, perhaps a frittata or quiche of some sort. You can cut small portions and can be served at room temperature and still taste delicious.

i agree with the above, keep it simple. serve home baked items and lots of jams, good butter, cream cheeses.... and maybe some smoked salmon or a smoked ham as the bulk of the meal. the egg salad will work, also.... the more you can do ahead, the better off you'll be.

or experiment with a baked egg dish ahead of time, i've done them before for crowds, it's not that hard, but with all of the other stuff going on ....

I disagree! My mother used to do a bruch for 30-40 and the egg cassroles are a good choice for feeding a huge crowd. You can serve egg casseroles at room tempature, they will still taste all right. Waffles would be a lot harder to make en mass.

I'd add more of a pastry assortment, as mentioned above, in addition the cinnamon rolls.

What does your kitchen have in the way of ovens and how can you keep food warm (140F +) once it is cooked? That more than anything would dictate what you can (or cannot) do. I agree with Heartofglass that the baked goods should be done the day before and I would add--and be baked by someone else. You'll have enough prep to do with your casseroles.

incorporate any breakfast meats and cheese of your choice. We did this for a Father's Day breakfast. Church supplied the ingredients and volunteers look the ingredients home, did the prep work the night before, and baked the casseroles while getting ready for church. We also offered a honey lime glazed fruit salad that was quite tasty..
