I know its rather dorky of me, but for the last few months I've been going on per se's website daily and checking/saving the pdf copies of the menus to see their progression. Every now and then I notice some large changes, first it was the inexplicable appearance of the offal menu which ran for a little time this winter, and now recently the salon menu is always there.
BUT, last night for the first time there was a 4th page to the pdf; a $175, 5 course menu, without any heading. I'm wondering if anyone knows what this is. I know last week or so, Platt over at NYMag was plugging for a more abbreviated menu...could this be what I stumbled across??? (I've never seen them post pdf of the weekend lunch offerings, which is my other thought of what this might be)
