Passover Menu for the week

I'm trying to approach passover differently this year. I used to always make lots of matzah dishes, and lots of kosher for passover mixes and boxes because that's what mom always did. Now that I've cut most prepared foods out of my diet (and I'm a vegetarian), I just want to make "regular" food for the week.

So what are YOU making for dinners and lunches for the week of passover?

I'm going to a friend's house, so they are making most of the food. I need to come up with a vegetable dish though: I'm thinking green beans with almonds and cranberries.

Here's a good dessert idea for you though: flourless chocolate cake. It's insanely easy to make, yet very delicious and impressive!

I'm a vegetarian, too, here are some non-matzo-based "regular food" things I enjoy during passover:

Ratatouille
Frittatas
Baked potatoes with cheese
Vegetable latkes
Vegetable soups
Deviled eggs
Lots of salads

And some matzo-based things:
Matzo-pizzas!
I always makes blintzes during passover, too, using matzo cake meal instead of flour.
Matzo brei, of course
Matzo farfel baked with cheese and eggs and sour cream, deadly.
Matzo with egg salad made with dill and green onions

Desserts
Ice cream!
Passover blondies
Matzo buttercrunch
Macaroons.
Meringues.
Cheesecake made with a nut crust

I'll be doing a lot of salads: tuna, chicken, egg, etc. Some eaten on matzo, some not. I also like using this week to make soup - vegetable, matzo ball - all good and filling, so I don't even miss the bread. One caveat, however, is that since I keep Pesach according to the Sephardim, I still eat rice, which helps a lot!

I make plenty of Seder food so that we have it throughout the week. We gave the usual suspects like Matzoh Ball Soup, Gefilte Fish and Brisket.

As for ordinary food, lunches will be turkey roll-ups with romaine lettuce leaves, omelets, egg salad, smoked fish etc. One thing that I plan to eat more often is Matzoh Pizza which is so simple and delicious:

Each year I make a new discovery as far appropriate Passover dishes so hopefully I'll come up with something new soon.

For Holy Thursday...

Lamb. But, unfortunately, it won't be roasted on a spit in the front yard. Bummer. Maybe next year!

Also, romaine & arugula salad, hummus and pita. No matzo, though I love it. Oh! And lots of cabernet!

Make some Portobello pizzas - stem and trim gills off some big Portobello mushrooms. Brush caps with olive oil, place in a baking sheet and fill with some chopped tomato, chopped basil; top with grated mozzarella and Parmesan. Bake at about 450 for about 5 minutes until cheese melts and starts turning golden.

Crustless Quiche is another good idea - leftovers are good cold. Frittatas are too.

Stuff zucchini with a mixture of feta or cottage cheese, a little thyme and some chopped grape tomatoes and some onion that you've cooked in a little olive oil till golden. Bake at 400 for about 20-25 minutes till browned.

Tabbouleh made with quinoa is OK for Passover.

this post makes me happy :) i also try to just make "regular" food that's still kosher for passover...so lots of vegetables (i got two bunches of organic kale on sale today at the greenmarket), hard-boiled eggs and cheese. now that i've discovered quinoa, im making a big batch for seder with the plan that we'll have leftovers. and i picked up some potatoes today - baked and topped with other veggies that should make for some weekday lunches. plus, growing up mom would always make latkes for at least one night of passover - and it's all about tradition!

Quinoa tabouli is a favorite at our house.

Vegetable kugels are popular and simple roasted veggies too (carrots, onions, mushrooms, cauliflower, zucchini, fresh garlic, season with black pepper).

over the years, I've found a lot of "regular" dishes that are passover friendly, or easily modified to be passover friendly.

Beef stew (thickened with anything passover friendly)
Tuna steaks with capers and tomatoes
Schnitzel
Chicken breaded with matzah meal and spices and baked over potatoes
Ratatouille
roasted turkey stuffed with onions and oranges
Turkey burgers w/leeks & onions (no buns)
Coq au vine - yes, it's passover friendly! and i suppose you could pour leftover sauce over matzah balls?

twice baked potatoes
egg salad
tuna salad
various spinach stuffings
fritattas
stuffed mushroom caps
any kind of greens you can imagine

i finally found some KfP matzah cake flour, so now i can make all sorts of cool desserts.
