Oops ... save my sprouts!

I seem to do this more often than I'd like: I was prepping some dinner for myself the other night and decided to roast some brussels sprouts along with my eggs benedict. I washed, cleaned, and halved the sprouts, put them aside on the counter while I got to work on the eggs, and .. forgot about them. (It was my first hollandaise!) They've sat out on the counter now for about a day and a half. They look okay to me -- a little wilted and pale, but not mushy or "bad." Can I still cook them? Is there any way that will save them, or should I just use them as if they were still fresh?

I'd roast them in the oven with olive oil, garlic, lemon juice and S&P until they get a little crunchy.

i second duncans suggestion. just roast them up with seasoning of your choice.

Forgot to say that if you have any bacon lying around, chop up and add to the mixture. Every brussels sprout deserves a little bacon!

Don't worry, they are probably fine. Cruciferous veggies such as sprouts can sit out on the counter with impunity unless the weather is very hot. And any kind of cooking will mask the slight wilting. Enjoy!

It's not like they're refrigerated while they're growing, and even in the grocery store, they aren't stored at a very cold temp. They might be misted and kept a little cooler, but it's not as chilly as where the milk is.

If you haven't cooked them already, what I'd do is put them into some cold water first, to refresh them a bit, and then drain and cook however you want to.

I would eat them!
