Making Chicken Salad and Seafood Salad healthier.

My dad went to Sam's club and bought a quart each of Chicken salad and seafood salad. I was looking at the nutrition info and was pretty appalled by the fat content for both. (37% DV fat for 1/3 cup of chicken salad!)
Aside from adding in a whole bunch more veggies: carrots, celery and onion...
What would you suggest for re-imagining these salads into a healthier lunch?
I tasted the seafood one today. It's okay. I could work on it a lot more to make it good....
