In need of Feta cheese recipe ideas
My mom just gave me a giant block of feta cheese that she got on sale.
I need ideas, besides the Greek salad route, on what to do with it.

Add it with some chopped olives, fresh oregeno, ground turkey, s&p and make TURKEY BURGERS. Add garlic too if you wish. Top the burger with tatziki. or don't.

Spanakopita? Or, y ou can take the easy way out and make spinach feta filling and throw it in a pre-baked pie shell like Pepperridge Farms. It takes a few minutes to prep, a half hour or so to bake, and is actually somewhat healthy-ish.

I throw it in omelets, pasta salads, regular salads, pasta dishes.
The best hoagie I ever had was this place that made a feta cheese hoagie basically just feta on a good roll with salad. That was my favorite sandwich ever. What is there not to love about that?
Quiche is great with some feta. A layered mediterranean dip, humuus, a kalamata olive relish, rough chopped onion cuke tomato and then your feta on top serve with fresh baked pita triangles.

Cook up some orzo, grill some shrimp, asparagas, and red onion slices. In a bowl toss the grilled items with some sundried tomatoes in oil, fresh basil, lemon zest, lemon juice, olive oil, and salt and pepper. Cool, then toss in the Feta, oh yum!

Makes a great dip when pureed with roasted peppers, olive oil, and lemon juice -- I also add smoked paprika and sriracha. You also might want to look up Ina Garten's roasted vegetable orzo salad with feta recipe, it's a winner.
For parties I've done crostini with feta and caramelized onions (better with creamy French feta, but fine with whatever you've got) and also strawberries, feta, and reduced balsamic. Enjoy!

greek pizza! my mom loves to put feta on homemade pizza with pesto sauce, fresh sliced tomatoes, and spinach.

It makes a wonderful simple topping for spaghetti (whole wheat or otherwise)--throw a bunch of cherry tomatoes & sliced garlic in a skillet with some olive oil, let cook until tomatoes are almost bursting. (I usually keep the lid on the skillet, but like it best if I can use a glass lid so I can keep an eye on what's happening) Throw in some feta, crumbled, & stir to coat. Dump over hot, drained pasta, and sprinkle (or not) with fresh parsley.

I sprinkle it on grilled veggies, or cube it and put it on skewers with chicken and vegetables. My boyfriend LOVES that.
I love it in wrap sandwiches, in an omelette, on pizza.
You can also buy those frozen phyllo cups and fill them with a mix of sauteed spinach and feta cheese...I always make those as party appetizers!!

Here is a different recipe for feta, try making meatballs!
Feta and Olive Meatballs
A Greek twist to making meatballs.
Ingredients
1/2 C. chopped parsley
1 tsp. dried oregano
2 Tbs. finely chopped onion
1 lb. ground lamb or beef
1/2 C. crumbled feta cheese
1/2 C. pitted green olives - coarsely chopped
2 eggs
Directions
Combine all the ingredients with your hands and shape into 16 meatballs. Place the meatballs about 2-inches apart on a baking sheet and broil, about 3-inches away from the heat until browned on top. Turn over and broil on the other side. You don't really need any salt in this recipe as the feta and olives provide enough. You can also fry the meatballs in olive oil, but I think broiling is easier. Try the spice mixture. It tastes great in the meatballs.

Feta/shrimp/spinach pizza. Make a rosemary bechamel in place of the usual tomato sauce. Add the feta/shrimp/spinach. For cheese I like a combo of asiago and mozzarella. The cheap frozen salad shrimp work well. This is sooooo good. A twist on the same old same old pizza. I have had this for a meal and an appetizer, it just works.

i had some at a turkish restaurant the other night rolled up in phyllo and then deep fried with a vinaigrette to dip. it was delicious. you could probably do something similar but baked instead of fried.

crumble some up and mix it with chopped tomatoes, olive oil, s&p, and a little oregano. spoon it onto a nice crusty baguette and enjoy.

I recommend either feta/mozzarella/red pepper/ black olive/onion/pesto pizza or bean salad. For the bean salad, just throw together white rice, black beans, feta, black olives, and whatever veggies you like. Then you can add a little salad dressing or just some oil and vinegar with spices. Easy, light, and tasty.

One of my all time favorite dinners is stubby pasta with chopped broccoli, garlic, olive oil, crushed red pepper and feta cheese. While the pasta is cooking, heat the olive oil in the microwave with chopped garlic on low until the garlic is the lightest golden brown. Chop the broccoli up fairly small and add to the pasta about 4 minutes before it's done. Drain the pasta/broc (reserve about 1/2 cup water) - toss with the olive oil/garlic, sprinkle on the crushed red pepper, a good amount of S&P and a handful or so of crumbled feta and add a bit of the pasta water to loosen things up. It's really tasty and very easy and quick. Takes 20-25 minutes (includes boiling the water), start to finish.

Saute some baby spinach, crushed red paper and dried basil. Let it cool and mix in an equal amount of crumbled feta. Cut a pocket into a skinless and boneless breast or a veal chop and use the spinach and feta mixture as both the stuffing and a topping. Do the oven thing @350ish; When the feta on top starts to brown its done. I hope this helps!

A restaurant near here serves what they call "Mediteranean Pasta" which is pasta with feta, olives, roasted red pepper, choice of chicken, shrimp, or neither. Maybe lemon? Capers? Something like that. Anyway, it's pretty good.
You could also mash it up and add cream cheese and/or yogurt to bind it and make a dip or spread.

I love feta and black beans on a warmed corn tortilla with a dash of hot sauce. Top it with a mixture of shredded cabbage, fresh lime juice, spring onion and cilantro. Add diced fresh jalapeno for some zip. Really fast, easy dinner that’s healthy and delicious.

I've been making a salad with chickpeas, olives, tomatoes, cucumbers, feta, red peppers and a light lemony dressing. I've made it twice in the past week! very refreshing.

I make a spicy/garlicky tomato sauce and then mix in fava or lima beans, let it simmer, and then eat it topped with feta. Extremely delicious.

An online recipe I tried recently -- mix equal parts light cream cheese and crumbled feta (had both cheeses at room temp and forked the feta real thoroughly for a seamless blend of the two). Add some minced shallot and garlic, coarse ground black pepper, and thyme to cheese mixture. Form in small disks (or just drop as blobs if you're lazy like me) and pack together in container with cover. Pour on extra virgin olive oil to cover and generously sprinkle on more ground spices -- black pepper, crushed red pepper, thyme, rosemary, basil, marjoram, garlic powder, etc. (Original recipe called for all powdered spices to make it keep longer but I felt the need for stronger garlic/shallot presence.) Let marinate in the oil and spices for several hours before serving. Bring to room temp for eating leftovers too. Very good (and addictive) w/ sourdough bread pieces, also fine w/ plain crackers.

Thanks for all the ideas everyone! Tonight I made an orzo salad with chopped arugula & basil topped with feta, cranberries, cherry tomatoes and toasted pumpkin seeds. Not too shabby.
Next, I'm going to try the watermelon salad. Sounds super refreshing!
