Griddle Heaven

For some reason I've never had a griddle. Till now - I got one as a gift. It's a Lodge - 16 lbs of pure cast iron, even heat distribution, easy to clean. Perfect fit over two burners on my gas stove. And I love it. Can't stop cooking on it.

Has relieved me of using at least 2 frying pans, my toaster, my oven, my gas grill and the George Foreman lean electric thing. Why I've never had one is now something of the past. Can't wait for the family to get up so I can short order them for breakfast - pancakes / eggs / french toast / hash browns / sausage / bacon.
They call it - I'll griddle it !

My question to SE'ers is anyone else having as much fun with a new legacy utensil and can you name the most creative thing you've 'griddled'?

I have used it to make Cuban sandwichs and other sandwichs pressed. Fajitas come out get in this pan as well.

So far it's been Buffalo Meatloaf Burgers, with the fresh-ground buffalo meatloaf mixture coming from a local butcher shop. I'll be creating my own meatloaf mix at some point from their ground buffalo.

16 pounds? Holy Hannah!

I'm having fun with just about everything in my kitchen as it was all recently liberated from my storage unit.

I bought the Lodge press and love it. Be sure to look at the size if you consider this product. It isn't very big, large enough for a sandwich or two small ones. I did some ham and muenster paninis with baguettes and it covered about four of them. It did a great job, and there was no pain in the buttocks grills to clean from the aforementioned FG.

There was a very recent thread "what do you use your electric griddle for besides breakfast", that has a lot of answers. English muffins for me.

oh man, ribster.. I think you tipped me over. I've been coveting one of those for the cabin... tradition is BIG breakfasts on weekend mornings, but wasn't sure. Now I gotta have one.
