Got any suggestions for chicken giblets?
Hi all,
Does anyone have suggestions for preparing chicken giblets? Specifically the little bagged bits that come tucked into the chicken. I have two chickens worth.
I once tried following Julia Child's recipe for chicken liver pate, scaling it down for and using all of the parts, not just the liver. It turned out ok, but I have a feeling that was probably giblet blasphemy.

Cat food. My mom fries them, but I don't care for them.

The only way I've ever had them is deep fried and even then, it's an acquired taste.

The Livers are great (although I'd leave the rest of that bag out of a paté) - Hearts grilled are fantastic: meaty and a little spongy. I usually end up throwing these things away though, because, really, one chicken heart (or one liver for that matter) doesn't go very far.

I simmer them until they are tender, then grind them up for kitty food treats. I mix it with a tin of chicken kitty food and my cats think they've died and gone to heaven. I also pick the meat off the neck bones for them as well.. The water that I've simmered them in is drained and added to the drippings of the roasted chicken or frozen and used the next time I make stock. As for eating them myself, nope, don't have the acquired taste for them.

poach them very slowly in chicken fat or olive oil until they are tender and eat them over a green salad with a mustard vinaigrette.

i cook them but don't eat them myself. i usually put t hem into a crock pot with onions, garlic, a little spash of red wine, a can of tomato paste a little bit of water and cook them until they are soft and tender.
or i save them up in the freezer and feed them to the poochies.

Bring to a boil, simmer over low heat 45-60 minutes and add to dog kibble. Bubba loves them!

It's the flavor in really well made dirty rice.

get some wine, some chicken stock, and celery/carrots/onion. saute those bad boys in some olive oil on high heat. remove. add more oil, through in the vegs. add wind. reduce. put the giblets back in. add stock, let it cook for twenty minutes. or until done.
i eat with rice, you can try crusty bread. or add cream or yogurt at the end for a creamy finish. also fresh herbs and lemon are good finishers.
you may also want to switch the oil with bacon.

Are giblets the same thing as gizzards, or is that something different? If similar, try this simple recipe for fried gizzards -- so delicious!!!
