Butterscotch chips...

I purchased a bag of butterscotch chips a while ago and used about a handful for brownies. Any suggestions on what to do with the rest of them?

I made spiced oatmeal cookies with butterscotch chips that got a lot of enthusiastic reviews once.

Eat 'em! But seriously...I used to make blondies (I think I just used the basic Tollhouse recipe, but probably changed them somehow...) and add both chocolate chips and butterscotch chips.

I also love butterscotch chips in oatmeal cookies--again, combined with chocolate chips is DEE-vine.

Better yet, make an oatmeal cookie bar, like a blondie, with butterscotch chips!

If you used them in brownies, I'd also suggest adding them to chocolate cake. I love chocolate cake with melted chocolate bits inside, so I can imagine that butterscotch chips would do the same!

Finally, I would suggest trying them with something pumpkin-y or banana flavored.

(Can you tell I have a sweet tooth :) )

Also, if it is too hot to bake, put them with pecans on ice cream for a butter pecan sundae!

Sugar cookies might be nice, or shortbread, or even on a crumbcake.

Blondies mostly and toffee cookie bars. Butterscotch cake.

Like Jerzee make toffee cookies yum I love those things. Frosting on cakes is good and over ice cream.

Scotcharoos! Try Deb from Smitten Kitchen's recipe. Melt them into a homemade butterscotch pudding. Combine with chocolate chips, coconut, and nuts for seven-layer bars. My mom makes a chocolate-butterscotch-pecan fudge ring that is delicious - I think Paula Deen has a similar recipe. Stir into muffins or cupcakes. Melt them down, combine with caramel and/or peanut butter as a dip for fruit.

I will use them to replace white chocolate chips in cookies. They are very, very sweet, though, so use sparingly.

we use them in 7 layer bars. yummy!

Haystacks. My favorite. Maybe you can half the recipe for what you have. Believe me, you might want to go back to the store for another bag

1 package butterscotch chips
3/4 cup peanut butter
2 cans of crispy chow mein noodles
I package miniature marshmallows

In a large microwavable bowl, heat butterscotch chips and peanut butter. Start at 1 minute, take out and stir and if not melted, microwave 30 seconds more or until melted and smooth when stirred. Cool 10 minutes. Stir in marshmallows and chow mein noodles.

Stir until coated, spoon out onto wax paper and refrigerate until hardened.

A coworker uses them in cheesecake bars. so good!

I guess this might be similar to your brownies, but I used butterscotch chips in these 5 layer cookie bars! Yummm.
