Best Grilled Cheese?

I have a hankering for a hunk of cheese* grilled cheese sandwich for supper tonight, but I want to try something new.

What is your favorite bread/cheese combination in a grilled cheese? Any special methods of preparation? Any "extras" (meats, condiments, veggies) or are you a purist?

My go to grilled cheese is Irish cheddar with thinly sliced green apple and sweet hot mustard on rye.

i like grilled swiss on wheat with thinly sliced red onions and tomato and a little bit of rosemary and black pepper.

Sometimes I want just the buttery basic with sharp cheddar, but when I want something more interesting i add bacon (usually turkey), thinly sliced apple, and carmelized onions. I think it's best on sourdough. Then again, I think everything is best on sourdough.

I have two versions:

Cheddar, Green Apple, Bacon, Honey Mustard.

Muenster, Diced Green Bell Pepper, Bacon

Hmmmm...upon reviewing it appears I have a common theme :)

Oops one more version:

Italian Bread, Ricotta Cheese, Slivered Almonds, Honey and Sea Salt.

@Embackus I usually do the same basic sandwich too. But bacon...and on sourdough? Mmm.

oh yeah, it's all about the sourdough. This is also one of the few applications where you can really get away with using turkey bacon, which helps with the guilt factor.

Sourdough. Jarlsberg. Red Onions. YUM.

I'm hankerin' for a hunka cheese -- I love that long-legged cheesy chunk guy in the 10-gallon hat! I even call my little sister that because she had such a high torso and long skinny legs!

my fave grilled cheese?? I love pepper jack on pumpernickle. grilled with lots of butter.

I just had Jarlsberg and a little prosciutto on homemade pumpernickel. It was pretty damn awesome!

A local grocery store has a nice soft French bread (so it's not really French bread) that I like to put cheddar, scallions, jalapeno, and Dijon mustard on and then grill. I prefer using that kind of bread to sliced bread because it doesn't seem to absorb as much oil.

The best grilled cheese EVER is from a vegetarian place here in San Diego. It's on squaw bread, has cheddar and cream cheese, with avocado and tomato. It's so good, I don't even know if bacon could make it better.

@lo82070 - that sounds awesome! Red onion seems to be the fan favorite accoutrement for the grilled cheese.

I'm heading to the store tonight for supplies! I'm thinking of a Cheddar/banana pepper/red onion on Sourdough. Maybe I'll put a little Prosciutto on there too...

One of my comfort foods is a toast tite with muenster, cheddar, and pepperoni.

I love a basic grilled cheese with cheddar, but I also love havarti and muenster with tomato - so delish!

You read my mind... I've been craving a grilled cheddar and tomato on rye all day.

I also like american on white with ham and tomato (lots of butter)

Cheddar and apples is pretty obvious and awesome one, but cheddar and pickles is a surprisingly good combo.

@beth I just love squawbread. The sandwich sounds delicious. Now I need to go to the store and look for some, I hope they carry it around here. They should there are enough casino's around here so you'd think they'd have it.

I've not actually tried this, but it just occurred to me that since I like banana-cheese empanadas, banana-cheese grilled cheese would probably be good too! I use cheddar for the empanadas and would do the same for the sandwich.

Like nearly everybody else, I too love cheddar, apple slices, and bacon. But for something different, I occasionally go Italian/Mediterranean with my grilled cheeses. So many Italian cheeses are perfect for grilled cheese - fresh mozz, provolone, taleggio... If you're a meat eater, add some prosciutto or salami; if vegetarian, grill up some eggplant and/or zucchini slices. Layer with roasted red peppers, spinach or arugla, and sun-dried tomatoes. I like to do mine panini-style when I go this route, but you could really do it any way you wanted.

Oh, and if you wanted some dessert, Giada de Laurentiis has a recipe for a dessert grilled cheese. Basically she used Brie, chocolate chips, and basil on some sort of white bread. I've never had it, but it looked amazing.

I like goat cheese and honey on mine. Goat cheese doesn't really melt like cheddar normally does, but boy it's really yummy. Pumpernickle please!

Muenster on squishy Wonder bread, both sides buttered before they hit the pan. It's been my favorite since childhood and sometimes you just can't screw with the classics.

oh my god, i can't believe no one's mentioned sauerkraut! that's one of my favourites, gruyere and some saurkraut with fried onions n' mushrooms. i use sprouted bread at home, but i imagine it'd be great on sourdough or a light rye.

but my UTMOST favourite i got off..i think it was The Main. sharp aged chedder between two fried, egged slices of bread and then melted. (i'd say frenchbread, but some people use cream in their frenchbread...and then we have french bread of course.)

Years ago, I'd have told you I was a purist but now anything goes. With the availability of both incredible breads AND cheeses, there are too many combinations to limit oneself to American Cheese on White.

Fontina on crusty baguette.
Melted brie on just about any bread - with or without a dollop of apricot preserves.
Blue cheese on pumpernickle, all the better if there's a slice of apple involved.
Muenster on brioche

@Kimberlymac - Giada's dessert grilled cheese sounds great but hold the basil.

Shredded old cheddar on both pieces of whole wheat bread with sliced tomatoes in the middle, sauteed in salted butter. Shredding the cheese makes all the difference, to make smooth melted cheese.

These all sound great! I love, love, love to make grilled cheeses. Especially when I'm at school (and without all the toys and ingredients of home)- I practically subsist on some variation of grilled cheese. Usually a complimentary preserve or chutney, whatever cheese I feel like using (or have the very last bit of), good olive oile, s & p. Depends on how creative I feel- sometimes I feel like these sammies (or openfaced) are the best outlets for creativity.

What, nobody has any love for Velveeta? I know it's factory produced plastic non-cheese but the grilled cheese sandwiches...

sailordave, I was just coming to post that. Velveeta on white with lots of butter, fried til it's dark dark brown and the cheese food oozes out....

@ sailordave- I third that and with a roasted tomato/basil soup with oyster crackers in it....Yum!! But to tell you the truth any cheese sandwich is a good cheese sandwich to me.

I am very partial to the Pioneer Woman's favourite sandwich which is swiss and cheddar on rye with green chilis, tomato, red onion and a dijoinnaise, done in butter. Yum!

Cheddar and jack combo (with optional slice of Canadian bacon); as cheese starts to melt - but before you can no longer pry bread open - place dill pickle chips and your favorite potato chips inside. Continue to cook until cheese melts; pickles provide piquancy, potato chips provide crunch! Very Third Grade, but in a good way!

Rye bread, Big slice of Tomato, two slices of swiss, spicy mustard. That is the perfect grilled cheese to me.

Braised beef short ribs (similar to Anne Burrell's recipe) and Tallegio on soft sourdough with lots of Danish butter. I'll go through the four hours to make the ribs just for this sandwich. totally worth it.

I may attempt mozzarella, parmesan, prosciutto, and melon tonight....will post on Pithy and Cleaver if it works.

Brie, carmelized onions, grainy mustard, maple ham, apple on whole grain regular or sourdough...my word...it rocks hard.

Also, old cheddar, onion relish, pear wouldbe good.

Cheddar and blue cheese, horseradish, roast beef...

Criollo bread, swiss cheese, mustard and salad... my version of a Veggie Cuban Sandwich. But I also enjoy mozzarella, tomato, basil inside a tortilla or good ol' American cheese and Tomatoes inside sprouted wheat sourdough bread...

I think I'm a purist. I love good bread, toasted w/lotsa butter, Black Diamond cheddar, ripe tomato, salt and pepper. Mmm mmm!

Provolone on fresh baked whole wheat, light on the butter, dunked in tomato soup. No extras, except for the soup.
