What 'cha cooking this weekend? Light, fresh and grilled here.

Today was absolutely gorgeous here. 65-70 and SUNNY! So we took our golden and two boys out to Green Lakes (awesome place) for a walk today. Man was I regretting not throwing some charcoal and burgers and dogs in the car, once I got a whiff of all the good eats people were grilling there.
Okay, so no mid afternoon cookout. However there will be some bruschetta, beef kebobs for the guys and shrimp for me on the grill with a salad for dinner tonight. Although it's supposed to rain all day tomorrow, I see a butterflied chicken and grilled veggies in my future along with a soaking wet head. What's on your menu for the weekend?

Feta and garlic pizza with sweet tea :-)

@dmcavangh--now you know that despite your cynical attitude towards the youngster who wanted garlic and feta on his pizza, his craving stuck in your head...YUMMY. Enjoy! I'm going to get my feta on tomorrow in an Israeli couscous and quinoa salad with cukes, tomatoes, roasted red peppers, red onion and kalamata olives for my lunch. Maybe throw in a couple of shrimp from tonight's dinner if my husband or 10 year old doesn't scarf down the extras.

I wanted to b-bq tonight in the worst way--Bought a bag of charcoal to boot!! In N.Y. was almost tropical, reaching a balmy 57 degrees but with the promise of rain tonight and tomorrow, I didn't want to chance it...So we made meatloaf, au gratin potatoes, salad and peas...(comfort food) ..Tomorrow is Japanese food-which I am so looking forward to having..Also homemade chocolate mousse... Yesterday, I went to the newly opened Crumbs on Long Island...much better than the Manhattan counterparts..Very fresh, moist, not ultra sweet and the cream cheese frosting to die for...Wish I had a cuppie right now!!

um, it's supposed to snow here, so I'm thinking something braised or oven-baked for tomorrow.
I did make mochi pizza today as I commented on the moffle topic, and it was quite tasty... and I used up my new year's mochi leftover :-)

@hmw0029--I feel your pain. Here in the Syracuse area we've had snow on friggin' Mother's Day. My husband is wondering if I'm tempting fate with all the grilling and yard work I've been up to. Here's to spring, regardless of what Mother Nature throws at us!

@Italiancupcake--oh, my. My guys have been begging for something sweet. Maybe I'll make some cupcakes for them tomorrow. Think of me tomorrow when I'm grilling despite the rain--although since I'm just getting over a case of pneumonia, I know my husband will be nagging me about a rain jacket and umbrella.

The hell with cooking here in Seattle, it's rainy, windy and cool out. So I am going to go where I found the best treasure in MY world, this place called Paeso's and this place rocked my world, swept me clean off my feet, they have this Cuban roast pork sandwich and they seve it with roasted corn on the cob with garlic/cilantro butter slathered on it.

@dhorst---I promise there will be no lecture here, but if you're just getting over pneumonia maybe you can put off the grill until the weather is a little nicer...relapsing from pneumonia is a bitch--I know because I was sick after my relapse for 5 weeks this past winter....:o(.. However, if you absolutely have to do something, then compromise and bake some cupcakes..Although, on the other hand, I'm sure it was really nice to be out and about in sunny 65-70 degree weather!! That always does a body, heart and soul good!!:o)

@dhorst-I'm not really having feta and garlic on my pizza, my 19 year old daughter would turn her nose up at that, as would I but, sweet tea might be nice if it's another day like today was. Don't take a chance with those shrimp, have them for a late night snack.

THIS weekend: shrimp de jonghe with brown rice and steamed asparagus, with chocolate mousse for dessert.

I'm soaking beans for a batch of chili. Nothing fancy--the point of chili, my daughter says, is to play it straight. I think she's right, but the better news is that I planted peas and radishes today, and the chives have started to appear.

I'm marinating a pork loin for the bbq tomorrow!! First grilling of the season. It was 83 degrees today!! We'll have the pork, a mixed pepper and corn grill and some baked potatoes....I will even throw on some beef dogs....cuz I like me a bbq hot dog to snack on while I'm grilling....along with a cold beer!!!

@dmcavanagh--did you have honey to sweeten your tea? Aww, geez ya big lug. : ) Okay, I generally prefer to make a plain old cheese pizza with some basil thrown on top asap when I pull it out, but...garlic and feta, olive oil--no sauce, with a bit of mozzarella, spinach, sun dried tomatoes (better yet, fresh tomatoes from MY garden--see me in August) and kalamata olives for a summer time pizza on the grill is just plain old wonderful. My ten year old would say ditch the spinach and throw on some asparagus. Thanks for the advice on the leftover shrimp, however my ten year old snagged them before I could even say a thing. He loves good food. Thankfully he has a really high metabolism and is really skinny. Can I borrow that energy for a while?

We had mushroom and broccoli tartlets last night, followed by risotto with milk-poached haddock, pancetta, peas, saffron and parmesan. Just cheese (nice, local cheese) and biscuits served alongside chocolates for pudding. We don't eat like this every night, but we had guests.

@Italiancupcake--you're right about a relapse from pneumonia. I will bundle up and not be foolish about braving the elements when I grill in the rain. I already ended up cancelling a trip to Russia (via frequent flyer miles from my husband) due to contracting pneumonia and it really was a problem that aggravated my asthma too. Cupcakes for the boys today! A nice indoor treat that will leave the house smelling sweet.

@NotAmerican--do tell about your milk poached haddock. I've soaked "fishy" fish in milk before grilling or baking it, but I've never poached it. Do you throw in any seasonings with the milk? Do you start with cold milk and cold fish and slowly bring them up to a simmer? Curious here. Sounds like you and your guests had a terrific meal last night.

@dhorst; just milk on medium heat for about half an hour. Milk in the pan almost covering, filled out with water if needed. The fish will turn white with poaching. I add pepper, but no salt or lemon. Oh, and a good half-cup of white wine. It takes away some of the 'fishy' taste. I heat the milk in a sauce pan with butter, then add the fish. Then I flake it onto the risotto before serving, topped with grated parmesan. The trick is to get the milk almost to a simmer without boiling.

For some reason {perhaps 2 eggplant in my fridge } I went all out mideastish yesterday..grilled the eggplant then made killer babag. {really love the smoky, charred flavor grilling the eggplant lends to it.}.a yummy greek yogurt tzatzki {sp.} with fresh cuke, scallion, etc. fresh tabouleh, then mixed some grated onion, oregano, paprika, etc in ground lamb & made minimeat balls..big fat platter fresh lemon and warmed syrian bead..it was a lingering afternoon repast..I could dive in again now...not sure what this rainy Sunday holds though going forward.

@dhorst-Oh, your son ate the shrimp you were planning on for dinner, you must be SO PROUD of him:-), OK enough of this , enjoy your cookout, just stay under the umbrella because I know that if it's raining in Albany it must be raining in Syracuse.

@dhorst - girl - are you getting over pneumonia???? oh that's bad. and you're cancelling your trip???? i'm so sorry to hear that. you sound very chipper, though, but take it slow... these warm and cold days can wreak havoc on the system.....

you take care and rest up a little, though i bet it's so hard for you to do....

as for cooking, i'm so tuckered out from cooking this weekend, i can't even remember what the heck i made.
