I am having vegan friends over for dinner and I love to cook tex-mex so I'm consulting my friendly SE community to see if you can throw any decent links or recipes my way. They love spicy food and just moved back to Maryland from San Diego so I might have to pull something spectacular out of my kitchen to impress after having been feasting on the tex-mex available in San Diego for the last few years.
I was going to do my usual turkey habanero chili and just use quorn in place of the ground turkey but read that it's not vegan-friendly.
My plan right now is vegan falafel with a vegan cucumber dill soy yogurt sauce. I know, falafel isn't tex-mex, but it is one of my favorite foods, and who doesn't like falafel?
