Need a cheese recommendation
Hey all- whilst plotting the next meal, I thought about a Thai-inspired pizza. I was thinking about using some ground turkey and doing a sort of Spicy Thai-Basil on wheat crust. I generally use Chihuahua cheese on all of my pizzas, (I find it to be creamy and tastier than mozz.), but wondered if there are other delicious cheeses that may pair well with this flavor profile. FYI, my SO is in the "family way", so old, yummy , funky cheeses are not allowed. Thanks!

For me personally, I don't like mixing cheeses and Asian flavors, except cream cheese in a Philadelphia roll. Call me crazy, but I might recommend you consider no cheese on the Thai pizza. Just a though, though. :)

I tend to agree with the above comment about Asian flavors. Why not try a finishing dolloping of a bit of sour cream or creme fraiche? (or even thin out some peanut butter and combine)

@emilytaylor: I love the peanut butter idea. I think a thin peanut sauce would be perfect for bruisedbuddha's pizza.

When I make a Thai pie, my toppings are
olive oil & garlic (no tomato sauce!)
- a light sprinkling of mozz
- chicken that's been marinated in a thai marinade (oil, garlic, sugar, lemongrass, lime juice, salt, pepper, chile pepper, peanut butter, ginger, cilantro)
- green onions
- sesame seeds
YUMMY!

California Pizza Kitchen's venerable Thai Chicken Pizza built a legion of fans, and as far as I know uses plain ol' mozzarella.

I feel like cheese isn't needed and the peanut sauce idea sounds yummy.
On a different topic, pregnant women can eat almost anything cheese wise you can normally get in this country. I say this because I am currently pregnant with my second child, a cheesemonger for almost ten years, and finishing up a degree in food science. Unless you have contraband cheese, i.e. raw cheese under 60 days old, bacteria can't survive the environment in old or pasteurized cheese, they die from pasteurization or it's too acidic or salty for them. I've had people come in heart broken because they were told not to eat parmigiano reggiano.
The only exception to this is queso fresco and queso blanco, both of which have been connected to numerous listeria outbreaks recently. I don't eat most of the Mexican cheeses when pregnant and I love them. The incidence of illness is just too high in comparison to all others.

Following the peanut idea, a lot of vegan restaurants use cashew cream. I would consider cashew cream also, maybe mixed in with a bit of coconut or tofu to loosen it up?

What is cashew cream? It sounds delicious... is it the same as cashew butter?

Went offroading a little------made my peanut-noodle sauce, but thicker (pb, garlic, red wine vinegar, soy, garlic-chile paste), and spread it on the crust. Rubbed the outer crust with sesame oil. Put the stir-fried ground turkey, crimini mushrooms, garlic, shallots, more chili paste and fresh shredded basil on top with a drizzle more of sesame oil and fired it off. It was pretty good---the thawed, homemade crust didn't rise much, but made a pleasant, almost crackery crust. Almost would work better as an appetizer.... S.O. wanted something saucy to go with it---maybe a spritz of sriracha, or a milder, juicier tomato-based hot sauce.......anyway, thanks for all of the comments! Cheers!

I'd go with the no cheese idea as well. The peanut butter idea sounds interesting, but why don't you make an Asian sauce to go on the pizza? Perhaps make the sauce for sesame noodles with tahini paste and see how that works out.
