Leftover roast recipes?

I made a chuck roast today and it came out really nice and tender, but even after five people at dinner devouring it there still is enough for another meal. Any ideas on how to use it up? I was thinking maybe something Mexican-y, but dont have a recipe in mind. Maybe burritos with a sauce?
