Frog legs -- I was told I was being served them once as a little kid, but it was really just frog-leg-shaped pancakes (my parents had weird friends, haha).

Pre-sale' lamb. They grow it on the marshes of France, and it eats the sea grasses. Translates as pre-salted, and the flavor is said to be divine.

i am deathly allergic to fish, which was discovered when i was a baby. i desperately want to try salmon and tuna. but alas, i was recently re-tested and the allergy lives on. :(

@junie - fiddlehead ferns are a must try! I love them! Alligator is no biggie but you should try it.
@mikaque - osso bucco is a dish that is rich and delicious but only when cooked correctly. Make sure your fist time is quality!

I have had most foods that I have wanted to taste, but I would like to try Domaine de la Romanée-Conti and a number of the other grand cru burgundies . . . preferably IN Burgundy.

The foods I am keenly interested in trying can't be gotten in the US as they are controversial like whale (Japanese style), dog (Korean style), and rats (Thai style).

Stuff that I can get in the US would be elk (I've had deer - how different is it from deer?) and blue crab...I'm sure there are other things, but that's all I can think of atm.

@junie -- I tried fiddlehead ferns a while back and they were a huge disappointment for me. I thought they would be tender and taste of spring, but they were bitter and ick. I hope your experience with them is better, because they are so interesting looking!

I've never tried foie, and I'd like to just to see what all the fuss is about.

@Cassaendra-Elk is much better then deer, I'm sure youcould find it in a restaurant in your area or order it online. It's farm raised in many parts of the country.

btw, i really hope that everyone does get to try the things you listed-foie gras, frogs legs, caviar, truffles, duck fat, marrow, sweetbreads, etc are some of my very favorite things...you won't be disappointed! it's almost like hearing that your friend hasn't seen a particular favorite movie or something & you want them to see it instantly, y'know? 'you don't know what you're missing!' :)

@Amandarama....Oh Durian. My roommate got one in an Asian grocery over Christmas break and brought it back for us to try. No one wanted to open the bag. So it sat on our counter for a week...and began leaking some sort of liquid that smelled like rotten trash. All I could do was gag, triple bag it and throw it away. I was scared to even open the bag LOL.

Gooseberries.

I adore durian. Honestly, it's like a sweet, vanilla-onion creamy kind of thing. The stench (like sewage and sulfur in my opinion) makes it tough to actually get it past your nose into your mouth, but once it's there...yummy!

I have always wanted to try gooseneck barnacles (percebes I think?). I can't figure what part one eats, but everyone I have ever talked to who has eaten them loves them.

Off the top of my head...

@Junie I had alligator once and it reminded me of chicken. No kidding. The idea of eating is kind of cool. Cajun restaurants serve it.

On the subject of durian, it smells. A lot.

As an ice cream lover and non-New Yorker, I totally want to try that cereal soft serve at Momofuku Milk Bar.

Am I the only one who thinks durian's stench isn't so bad?

Maybe on a hot, humid, Southeast Asian day the stench can get pretty thick, but otherwise its just a smell...an unusual smell, but not so bad that you had to hold your breath around or even worse, retch at smelling it.

I think durian's reputation for being a stinker is all over hyped. The taste is funky and way rich and not something I can eat gobs and gobs of, but its taste is as intriguing and complex as its odor.

Anyway...I've yet to try, but would like to:
Sweetbreads
Fresh truffles (not from a jar, not in the form of oil/salt, etc)
Boudin
Raw milk cheese
Gooseneck barncles (as mentioned above!)
Bear meat (don't know why this intrigues me so)
Wild strawberries
