How do you keep feta fresh?

Hello all,

I buy feta in a large (1kg) container from Costco and it's excellent feta, but the problem is that it goes bad extremely quickly! The brine goes all yellow and nasty, and smells bad. If you slice away the outer bits, the cheese is fine underneath, but there's got to be a way to keep it better preserved.

Any ideas?
