My husband loves a good burger. Myself...I haven't had one since 1985, so... He travels quite a bit and sometimes that's the fastest and safest thing on the menu.
In Shanghai, his burger always came with a fried egg on it, much to his dismay. He couldn't remove the egg, it was smooshed onto the burger when he got it, and somehow wasn't able to conquer the language barrier or like Pooch (salad issue vs. burger issue), had a chef who insisted that it was left on.
Paris, he had a pretty good burger, but the steak frites were what he raved about.
London, this time around, he's staying at the Hilton London Olympia, and to my horror he ordered the room service. And yet he said it was probably the best burger he's had in 10 years. He described it as being perfectly seasoned with a really great carmelized crusty outside and a moist and tender inside, topped with a really great cheddar, served on a perfectly toasted roll.
The other food there is mediocre at best, but he said someone there knows how to cook a really great burger.
Now I'm jealous. He's always liked my burgers best. And yeah, though I don't eat them, I do have nose like a blood hound and it's served me well in the past as far as what's good and what's not. And then there's the q&a session (dissection) that often occurs after a meal. What are your favorite burger tips and toppings?

Somewhere – I thought it was here or at A Hamburger Today – I saw a page on Costa Rican burgers. And, by george, by googling hamburger completo "green beans," I FOUND IT!

@dhorst - i can't believe anyone can make a better burger than you! and if the burger at the hilton london olympia was good - it was probably made with great ingredients and with care. so, good to know there out there...
i usually don't eat too many burgers myself. there is one place in town that makes a great burger (they buy locally raised meat) so i've had them there once or twice. they make an excellent duck burger, with a FRIED EGG & duck cracklin's on a home made english muffin. and YES, i did eat the egg on that burger and it was excellent.
myself, i like a good lamb burger with chopped cilantro, scallions & feta mixed in.... and then i grill that sucka over a slow charcoal fire....
and a nice side of tzatziki (i don't know if i spelled that right)....
and a nice side of tomato & cucumber salad ... with lots of red onion...

favourite topppings: beetroot (it's an aussie thing), fried egg and bacon.
burger tip: add a couple of tablespoons of kewpie mayonnaise and a sprinkling of dried chilli flakes or tabasco.

I dont eat burgers out and rarely make them at home for myself, but I've found if I weigh out 4.5 oz and only handle the meat gently and as little as possible, then sear it in a hot skillet (setting 7.5 on my range) liberally salted on one side, pepper on the other, salt down first. 4 min on side one then 3 min side 2 onto a toasted potato burger roll, with ketchup and mustard three slices of sharp dill pickle and a little very thin sliced (ie shaved) onion. Doing this is my SO's burger heaven. Oh yeah I forgot the meat needs to be room temp for best results. lol

If you've already got the good crust factor going, I'd bet the reason he liked that one better than yours was the cheese. Pony up for real English cheddar and you'll be on top again.

I season my meat with worcestershire and (please don't hit me) Lipton's onion soup mix. It needs to sit for a while so the dehydrated onions soak up the moisture, and then it's awesome. I smoosh my patties more in the middle so they are flat when they're cooked (you know how if you make them perfectly flat they shrink up and end up all round so your toppings all slide off--very annoying), and cook a little more evenly too. And I like colby-jack cheese melted on top, with tomato, lettuce, bread & butter pickles, mayo, mustard and ketchup. Oh, and grilled onions. Of course, just the tomato with a fried egg doesn't suck either.
