egg substitutes?

What do you use to replace eggs in most recipes? My family is vegetarian (no eggs, seafood, poultry).

A number of vegans I know use Ener G brand egg replacer in their baked goods. I've used it and it is okay. I don't recommend it for anything where the flavor of egg is important.

I've heard o,f but haven't tried, soaking some ground flax meal in warm water and using it as an egg replacement.

It depends on what you are trying to make. There are a few options that I use

- 1/4 c apple sauce = 1 egg. I use this for most cookies, cupcakes, some brownies. Bananas also work well for this. I've used canned pumpkin as well.

-Ground Flax seed mixed with water. This works with recipes where the flax flavour would compliment what you are making or be hidden by other flavours. It's fine for oatmeal cookies, for example, but i wouldn't put it in sugar cookies.

-Commercial egg replacers. I've had mixed results with these. I wouldn't recommend for brownies, but it has turned out well in pancakes.

-Silken tofu. This is mostly for heavier things. Binds things well but you aren't going to get much fluffiness

I use E-nergy Egg replacer for most baked recipes that call for eggs. I use it for my Carrot Cupcakes, banana bread, etc.

I use Vegenaise eggless mayo for any recipe that needs mayo - I use it in dips, sandwiches, ceasar and other salad dressings.

I also use tofu - silken or firm - to make eggless scrambles, eggless fritattas, ranch dressings, etc. And because marshmallows usually are made with egg whites, I have a way of making rice krispies treats without them.

I also have recipes for Flans and Coquito that do not need to use any eggs at all.

Here is the most clever egg substitue recipe I ever saw!!!!
You don't have to make the cake but the egg substitute recipe rocks.
