bean dip
Made a bean today and it's a little...flat. As in, "eh". (White cannellinis, lemon juice, anchovy paste, olive oil, s & p.)
I'll eat it, but it's made me start wondering what other bean dips you might make that have a bit more flavor. Not necessarily heat - but flavor. (Maybe because white beans are the white bread of the bean world?)

My fave ever is a sun-dried tomato and asiago cheese with beer, red pepper and garlic. Got it at a local pub and have been trying to copy it just right ever since.

I make a very similar cannelini bean dip to eat with homemade pita chips for a light dinner fairly often. Like @BobbieAnne I add garlic to mine and I would also strongly recommend the addition of a fresh herb of your choice when available. I tend to make this anytime I have leftover fresh rosemary I need to use. I've also found that using an olive oil with a good strong fruity peppery flavor adds a lot more to the dish than a milder olive oil.

Mine is basically the same as yours, except I cook garlic confit-style in olive oil until it's soft and golden like when you roast it in the oven. For the last couple minutes I add sprigs of fresh time and sage (or whatever) to the warm oil, then everything else.

Garlic is a must and some chipolte powder or smoked paprika would add some additional flavor.

Are you just interested in white beans because when I read this I immedietly thought of pinto bean dip.
I cook pinto beans in a crock pot with onions, garlic, cumin and beef stock. Then, when they're tender and cooled, I mash them in a little lard and season them with more cumin, salt and pepper, chili powder, coriander and a drizzle of Sriracha. They are so delicious and can just be eaten with tortillas or smeared on just about anything, but it makes particularly good bean dip as well.

When I make white bean dip I gently heat some olive oil, lemon zest and red pepper flakes in olive oil, then add that oil to the beans along with lemon juice and whatever other flavors I'm adding (i.e. olives, sun dried tomatoes, parsley) I think what you're missing is probably salt, acid or both.

poach some whole garlic cloves in olive oil, and then when they're golden brown, add a smooshed clove or two and a drizzle of the flavored olive oil, and maybe a chop or two of fresh rosemary..... and hot pepper if you want to really live large.

I was thinking garlic before I saw any of the comments on this post, and I'm glad we pretty much all agree. I'd second paprika or just a little dash of cayenne. It won't necessarily give you heat, but it'll give you an extra something. Sundried tomatoes also sound great for this.

I make a white bean dip with artichoke hearts, lemon juice, salt, and pepper. Sometimes I add a little bit of roast garlic or some herbs, sometimes not. The key is the lemon juice, which wakes up everything.

I use butter (lima?) beans instead of cannellini, which I think have a bit more flavour. Also garlic, rosemary and lemon juice.

fresh rosemary and roasted garlic and lemon, all three, with white beans and olive oil--so good. most people overlook the rosemary, but it's essential.

Yes, pinto beans..I always have to have a pot of them going. Hispanic DH wants them de la olla...straight from the pot, he eats some like that, then I will make refried beans with some of the leftovers with onion, garlic, cumin, jalapeno, onion, ancho chile. I then spread beans on a plate, add grated cheese, sour cream, chopped green onion, tomato, cilantro and then we recklessly consume with abandon with some oven baked corn tortilla chips.
