Banana Oatmeal Muffin/Bread recipe needed

Does anyone have a good recipe for banana oatmeal muffins or bread? I plan on putting some pieces of banana chips in them and also making an oatmeal crumble-type topping for them.

I found this recipe - http://noteatingoutinny.com/2007/02/15/sour-cream-banana-oatmeal-crunch-bread/ - which looks like it would be good but there is no oatmeal in the actual bread. Is there any way to put oatmeal in there (maybe by substituting out some of the regular flour?)?

Thanks!!!

I have a recipe I love that calls for a combo of whole wheat flour, ground oatmeal, and ground flaxseeds.

I'd love the recipe, pumpkin!

(That totally sounds like I am calling you a cutsey nickname. I'm not, I promise.)

Don't have a recipe, but this sounds like a recipe you could easily find in a bread machine baking cookbook, several of which are always available at your public library.

Bernard Clayton's "NEW COMPLETE BOOK OF BREADS", has a whole chapter on Oat Breads which could easily be adapted to fit your needs.

The recipe is from Moosewood Restaurant New Classics. I did a web search and found this post.

Banana-Oatmeal Bread

2 c ap flour
3 rounded t bp
1 t salt
1/2 t bs
1/2-3/4 c sugar (personal pref)
1 c rolled oats
2 eggs
1/4 c canola oil (or melted butter)
1/2 c milk
1 c mashed bananas
1 t vanilla
1/2 c walnuts (if desired)
additional oats or streusel for topping

Mix dry ingred together. Make a well in center and stir in combined wet ingred. Pour into a greased 9"x5" loaf pan. Bake @ 350 F for about an hour.

I have made this recipe for more years than I can remember and have done many, many variations on it. It works very well for muffins also. Raise the temp to about 400 F and bake for about 20 min.
