Atlantic ray wings

Having bought some ray wings I now don't have a clue what to do with them. The only advice I can find is to steam in foil, in the oven. Trouble is I don't know if they're strong in taste or not so I'm unsure whether to marinate them first, or should I griddle them, as they look quite a meaty fish?

Help me on this one - do you mean Stingray Wings ? Am curious to see what you do. Personally never had them - although there were times when I was jokingly told they used them to stamp out scallop imitations.

I'm not sure if these are the same or similar to Skate wings, but if so, there's a wonderful French American Brasserie here in ATL which serves an amazing Skate wing pan seared and served with a lovely beurre blanc and lemon caper sauce. The texture is similar to catfish, in my opinion, which I love. Moist and not "fishy" tasting at all...

Skates and rays are related but different animals. Skates have long been served as food, and as the posted above noted are especially highly regarded by the French. Also, my understanding is that "scallops" stamped out of skate wing are usually billed as such and sought after as a gourmet item, not as a cheap way to produce an imitation scallop. But I could be wrong.

I have not heard of rays being similarly used for food, but I don't know why they couldn't be. Maybe it's a marketing thing, and what we buy as "skate" in the fish market is in fact often the common stingray?

There are lots of species of rays, by the way, and clearly some would not make for goot eating. Not sure about the classification of skate.

thanks for your curiousity RIBSTER, I bought them from a fishmonger but they were pre-packed , presumably coz they're not local catch so I don't know what kind of 'ray' they were.....
Won't be trying again tho, kinda bland and had like a fin running right through with meat either side so was left hungry after (good excuse for banoffee pie, mmm).
I seasoned and griddled them then finished off with a knob of butter. Oh well you have to try these things :{
