AHH! What happened to my rice pudding?!

Hello all,

So, I made rice pudding for the first time last night, and...it was delicious! Creamy and flavorful, I thought I had nailed it. That is, until I opened the container of leftovers tonight. It's like one solid mass of rice and...pudding? I don't know what happened. Maybe it wasn't creamy enough to begin with? Maybe I cooked it too long initially?

I used basmati rice, whole milk, a bit of coconut milk, and spices.

Any ideas?
