Ziploc Bag Ice Cream

No watery ice milk kid's project here! Instead try this rich, custardy excellent gelato-like cream dessert.

Equipment:
All-clad saucepan
Cuisinart Hand-blender
Whisk
Gas stove
Ziploc freezer bag

Ingredients:
3 cups white sugar
2 eggs
2 cups heavy cream
1 package Neufchatel cheese
3 TBS lime juice
1 stick unsalted sweet cream butter

Directions:

Whisk dry white sugar and two eggs in saucepan to form goo. Keep whisking for three minutes so eggs will not curdle over high flame. Add butter. Keep whisking so butter is dissolved into egg-sugar liquid. Turn off heat. Add 3 tbs lime juice. Carefully blend block of cheese into cooled liquid with hand blender. Pour into Ziploc freezer bag. Freeze for 8 hours. Massage cream in sealed bag every 45 minutes for gelato-texture. The result? Tastes like lemon cheesecake on a stick.

Question: Any other recipes for freezer-bag ice cream? What flavors failed?

I have never heard of such a thing but it sounds pretty great, even for me, who is not a huge fan of ice cream. A gallon freezer bag, yes?

This sounds great - since I don't have an ice cream maker and it's too cold to play kick the can. Would mascarpone work, rather than neufchatel? And would a small amount of marsala or other alcohol prevent this from working by lowering the freezing point? I'd love to try this and create something with tiramisu/zabaglioine flavors

i've done the regular ice cream in a zip lock bag thing with kids at school and its turned out GREAT... and not even anything fancy like that! just cream sugar and whatever flavor... tastes like a frosty and i'm sorry but i love me some frosty every once in a while... and its a great project to do with kids...

Most ice cream is made with a combination of milk and cream. As in, milk to cut the cream, because otherwise it would be too rich (and have a greasy mouth feel).

This recipe includes cream, butter, and cheese. No thank you.

How does adding lime juice result in lemon flavor?

Clearly, you make one bag of stuff and stick it in the freezer for 8 hours. Then you have cream in a bag that you massage every 45 minutes....for eternity. Then bam...you get a result of cheesecake on a stick. Renzata, that's where the stick flavor comes from...magic!

Someone needs to proof read their postings. Also, this sounds odd. I have my doubts about this working as written.

I think it would be easier to just freeze cheesecake.

Do you eat this like a gogurt. Or do you stick a stick in it after the last message? I like making things with the grandboys, but not too messy. Is this just best in a bowl ? Would they have a feeling of accomplishment?
