What is your foolproof, fallback dessert?

I'm always looking for great dessert recipes, but I really love ones that I can make in less than an hour, and that are guaranteed to come out well. I love bar cookies simply because of their ease in one pan or dish.

Bread puddings

Making desserts isn't my thing, but when I really have to, I tend to make Marcella Hazan's Balsamic Strawberries which I use to top a really creamy, premium vanilla icecream. It's ridiculously delicious. recipe link

I go light on the sugar and slice the berries in half. I also use the best balsamic I can get my hands on. I keep a bottle of 25 year old for just this kind of thing.

I'd much rather end a meal with a cheese plate and a bit of fruit.

Pound cake. Depending on the meal, plain with a glaze, ganache or lemon/lime curd, chocolate sour cream is very rich, butter pecan with pecan/rum glaze. For my oldest son's graduation I made a plain pound cake tinted yellow with white chocolate ganache tinted blue--school colors. For my younger son's graduation he asked for the same cake--only opposite--blue cake and yellow ganache. He loved everyones look when he cut into the cake and it was blue!

Microwave cream pie. Easy and delicious!

Okay, I'll bite. Microwave cream pie?

For my family - Texas Sheet Cake.

For company - Amanda Hesser's Almond Cake (takes a tad longer than an hour to prep but well worth it and always a reliable result.)

Brownies. Quick, easy and pretty much fool proof. They can get thrown together in no time, especially if you use a cocoa powder version, vs. a melted-chocolate version.

Also love any of the Fruit (peach, apple) Cakes Cockaigne from the Joy of cooking. Beautiful fruit laid on top of just enough cake to make it official. Great for in-season fruit usage, like when you buy far too many peaches at the farmer's market.

Oh yes, brownies. I have a classic recipe that comes out perfectly every time. I use the premelted chocolate, which makes it really fast. Then I also use the premelted chocolate with melted butter, XXX sugar and hot espresso for the ganache. Quickest ganache ever! With a scoop of coffee ice cream you're good to go.

There is a peanut butter choc. chunk brownie from Bon Appetit that I have been making for many years also, that is also phenominal!

I third brownies! Ghirardelli's recipe, of course (and their cocoa too). Make it a little different by mixing in a can of cherry pie filling--you'll have to cut back on some of the liquid called for in the recipe. Yoom yoom yooooom de chocolat!!

ice cream sundaes if you want something really easy

I recommend a chocolate or mocha pudding cake - you know, the kind where you mix some dry ingredients, then pour a wet mixture on top, bake it off in the oven, and what comes out is basically a brownie-esque cake with its own hot pudding-like sauce on top. Scoop out a portion of the brownie, top with ice cream (which will immediately begin to melt), and spoon additional hot pudding-sauce on top. It's the ultimate ice cream brownie, basically.

Many fruit desserts are simple, quick, and delicious especially if you use in-season fruit. You don't need to make a whole pie, but a crisp/cobbler/brown betty/shortcake can easily be made in less than an hour. Try apples, pears, and cranberries in the fall or winter, and fresh berries and stone fruits in the summer. Top with ice cream, whipped cream, or even just a sprinkle of powdered sugar.

Chocolate chip cookies. I have made them so often that I no longer need a recipe and I can pretty much eyeball the measurements. :) They just get requested more often than anything else, I think.

@buffy - Oooooh, those chocolate cherry brownies are speaking to me!

I forgot, sometimes I add a handful of dried cherries (sometimes soaked in kirsch or cherry brandy!) and chocolate chunks to my basic brownie recipe. I always do cappucino brownies to have on hand over the holidays for quick desserts. Add some espresso powder and cinnamon to the batter; walnuts and choc chunks, if you dare. Just heat one in the micro, top with ice cream and a splash of Kahlua. A consistantly reliable and impressive "quick dessert".

a good bottle of cassis, a bunch of grapes & a pint of premium vanilla ice cream. Drizzle the cassis over the ice cream, add grapes for garnish, serve.

Home made ice cream. It takes a little more forethought than a half-hour before dinner, but it's not a lot of effort. Day before, I make the base and let it sit in the fridge for several hours/overnight. Then it goes into the Kitchenaid freezer bowl and churns away. Into a container, into the freezer, and I don't need to worry about it until serving time. And I can made it days in advance, if need be.

If I'm not sure about add-ins and ingredients, I can make vanilla and just supply sauces, nuts, etc. And in the summer, I usually have 2 or 3 flavors on hand, anyway.

Fruit cobbler. I can use fresh or frozen fruit, whatever nuts are sitting around the house, some flour, milke, eggs, butter, cinammon, and it's done.

Apple Crisp. Flour, sugar, salt, butter, and apples.Those are staples in the kitchen.

I agree with redhead on the fruit cobbler. A friend of mine gave me a super easy recipe for it a few years back. I don't have it with me at the moment, but I think it only has about 5 ingredients tops.

I've made it several times when I've had friends over and it's a huge hit every time! Some have even started requesting it regularly.

Chocolate souffle cake in the winter, lime cheese tart in the summer (softened cream cheese, 1 can of sweetened condensed milk, juice of 1 lime, maybe a little more; whip together, pour into a premade graham cracker crust, grate a little lime zest on top, chill for at least an hour)

In a pinch, I'll make banana-chocolate bread pudding. It's cheap, the bananas make the pudding stay moist, and hey, it's got chocolate.

Smitten Kitchen's apple cake is also incredible, and not very hard, if you don't mind cutting apples.

Another vote for brownies. Everyone loves a brownie, and when made from scratch are EXPONENTIALLY better than a boxed mix. Everyone I know requests that I make "my" brownies - the truth is that I use a pretty standard recipe I found in BBC Good Food magazine (but the same recipe is just about everywhere). I think that many people are so used to "mix" brownies that when they taste a "scratch" one they're blown away. I know that I won't eat a mix brownie anymore - I'd rather have nothing.

i like to make pannacotta - it's so simple and very light after a big nite of appetizers and dinner & cocktails and wine.

or crank up my small cuisinart ice cream machine which i love, and make either a fruit sorbet (usually frozen fruits from summer, plum is a good one with a shot of black cherry concentrate) .

if i make homemade vanilla ice cream, i'll usually make a trifle type dessert with stashed brownies or cookies that i save in the freezer.
it all comes in handy. throw a couple of strawberries around and drizzle some homemade chocolate sauce? a splash of amaretto? easy.

i've really cut down on the baking. i guess i baked like crazy in years past... now i go for the lighter, easier stuff.

I've got a couple of favourites that never fail to please: a wholegrain pudding with dates made with cream cheese, brown sugar, eggs and wholegrain flour and served with a warm dulce de leche sauce; a dulce de leche mousse served with dark chocolate shavings and chopped almonds and a white chocolate and dulce de leche cheesecake. I know I'm obsessed by dulce de leche but I'm Argentinian so it's in my DNA...

I agree that pound cake is a great fall back dessert. I keep some in my freezer at all times because it freezes so well. Besides lemon curd, I also like to serve it with a fruit sauce--usually huckleberry or blackberry and whipped cream.
I also fall back on pie a lot. It's always received well and I'm good at it.

Pie! With whatever fruit is in season and out of season--pecan!

Apple pie, and lately, NYT chocolate chip cookies. Everyone I have served them to has said—unprompted—that they're the best chocolate chip cookies they've ever had.

Tonight I made strawberry oatmeal bars, so simple - just butter oats flour and brown sugar for the base and then strawberry jelly in the middle then sprinkle with the rest of the oat mixture. Mmmm delicious! And 7 minutes prep.

So yeah, I'll bite with the microwave cream pie - care to elaborate?

i also make an amanda hesser recipe on a very regular basis -- her fruit tart. rhubarb, apricot or peach in the spring and summer and apple or pear in the fall and winter. it's dead easy and everyone loves it.

Just made them this week - - cream puffs (with real whipped cream, of course).

Panna Cotta. It has to be made ahead of time but it's quick to put together, tastes most awesome and looks fancy.

For me fallback recipes for dessert are never as simple as they should be...I'll skimp on dinner to make a fancier dessert. :)

I'm down with bread pudding too. You can stir in anything you like. Today I ran out of raisins, so I chopped up some crystallized ginger and stirred that in. Whooooo! Might add dark chocolate chips or something next time.

And since it's all healthy bread, milk and eggs, you can have the leftovers (if any) for breakfast.

Don't forget the rum.

I think it's technically called "Icebox Cake" but all it is is Nabisco's "Famous Chocolate Wafers" (find them by the ice cream in the grocery store or by the cookies) layered with homemade whipped cream. It's sort of like an oreo cake, but so much better. Cover with more whipped cream, chill and slice on a diagonal. Easy and delicious!

Chocolate Puddings - just chocolate chips, butter, eggs, sugar and a wee bit of flour and ten minutes in the oven. I almost always have all of the ingredients on hand, too.

Pavlova is a showstopper, and although the overall time is over an hour, the preparation time is next to nothing.

Homemade cream puffs, so easy.It's my St. Patty's dessert for my gang, I use pistachio pudding folded into fresh whip cream- amazing and green!!!!

Here are a couple to try:

Lazy Gal's Blueberry Crostata

1 sheet of puff pastry, thawed
2 pints of blueberries
1/3 cup sugar
1/4 cup flour
1 teaspoon cinnamon
milk
raw or sprinkling sugar
vanilla ice cream

Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set aside.

Unfold the pastry and roll out to about a 12 inch x 12 inch square. Place on parchment lined baking sheet. In a large bowl, combine blueberries with sugar, flour and cinnamon. Mound berry mixture in center of the pastry. Fold edges over of pastry over berries, pleating to make a circle. Brush with milk and sprinkle with sugar.

Bake for about 20 minutes, or until crust is golden and the berries begin to release their juice. Let cool for 5 - 10 minutes. Serve with vanilla ice cream.

Easy Chocolate Mousse

I always double this recipe. Serve in mini phyllo tarts or chocolate cups purchased at grocery store.

1 teaspoon gelatin powder, unsweetened
1 tablespoon cold water
2 tablespoons hot water
1/2 cup sugar
1/4 cup unsweetened cocoa powder, Penzey's Natural Process Cocoa
1 cup heavy cream, chilled
1 teaspoon vanilla extract, or other flavoring

In small bowl, sprinkle gelatin over cold water; let stand 1 minute to soften. Add hot water; whisk until gelatin is completely dissolved and mixture is clear. Cool slightly.

Stir together sugar and cocoa in large bowl; add whipping cream and vanilla. Beat on medium speed of electric mixer, scraping bottom of bowl occasionally, until mixture is stiff. Pour in gelatin mixture; beat until well blended. Spoon into serving dishes.

Refrigerate about 30 minutes before serving.
