We crave Italian 'Speck'. Do you?
In this household, and in certain restaurants that offer it, we have been craving this flavorful type of prosciutto lately. It seems to be popping up more and more. We finally bought some home from a local Italian gourmet deli. Have you tried it? How do you like to use it? On pizzas... for antipasti? It's so good...

We bought some on line from La Quercia in Iowa and it was really good. I don't remember exactly what we did with it but anything you would do with prosciutto would be great. By the way anything you get from La Quercia is going to be excellent.

I love speck in sandwiches with semolina bread, pickles, and melted gruyere.

BF likes it with mint in risotto, or wrapped around shrimp or scallops.

I love spec thusly - in my mouth with nada. Just happily dumped into my mouth sans absolutely anything, It also makes a nice sandwich.

You can totally find speck in Costco or Sam's - I always have a hard time remembering in which one I found what. I remember it being right near the prosciutto.
