Vegetarian Brunch

Does anyone have an exciting, yummy but not too complicated suggestion for a vegetarian brunch menu, no eggs?

what about a tofu scramble? all the same stuff you would put in scrambled eggs, but use tofu instead of the eggs. also, i know pancakes usually use eggs in the batter, but you can omit the eggs and the pancakes will still come out ok, and then you can top/mix in all kinds of fruit, nuts, other yummy things. or you can try breakfast pizzas - top with cream cheese and fresh fruit instead of regular pizza toppings. or breakfast bruschettas (somewhat sweeter) - toast baguettes, top with heaps of fresh ricotta and honey with fig preserves, or with brie and caramelized strawberries.

You could do a vegan recipe for crepes (to avoid the egg issue) and put cheese and/or fruit in them. Is it no eggs period or no egg-BASED dishes, like pancakes would be ok but scrambled eggs or quiche wouldn't be?

You can make a vegan french toast by dipping bread in chickpea flour-watter batter, to be fried in good quality vegan butter substitute. Serve with fruit salad and syrup.

Try homemade granola & fruit salad with a ginger or herb infused simple syrup. If eggs and dairy can be used, baked french toast or a dutch baby would be good. What about goat cheese & caramelized onion tarts? Strawberry and arugula salad served in parmesan frico cups?

Grab a vegan cookbook (Vegan with a Vengeance is at most libraries) and look at the recipes for tofu scramble, muffins, waffles, French toast, gravy, tempeh bacon, quiche, etc. You could also consider hash browns, oven-roasted potatoes, homemade bread and jam, and fruit salad.

Another thing that I love to do is to make huevos rancheros but substitute the eggs with crumbled, pan fried tofu. Mmmm. Good luck!

I am a lacto-vegetarian, so all my recipes are eggless, even the mayo I use is eggless. You can try a few of these:
Acid Fruit Salad
Eggless Scramble
Eggless Fritattas
Sorullitos de Maiz
SS Smoothie , - with spinach and strawberries
Carrot Cupcakes
Mushroom and Goat Cheese Spread - great on toasts
Breakfast Sandwich - you could certainly do this in a nicer bread, like whole grain bagettes, etc.

A really delicious bagel platter with lots of yummy toppings. What about a smoothie bar - use yogurt and cottage cheese as your base, then people can add whatever fruits they want. What about a baked oatmeal dish?

Forgot about granola with yogurt and fresh berries! Google "orangette consider it" for a great, easy granola recipe.

I think I might make red lentil soup and stuffed mushrooms. This is really more lunchy than brunchy.
I love the idea of the potato pancakes,though! and the bagel platter and make your own smoothie.
