Vegetable beef soup

I have a cooked leftover tri-tip and I would really love to make soup. I have no clue how to get started with the meat because it's already cooked. Any help would be greatly appreciated.

To make good soup you need good stock. You should simmer your meat from a chuck roast or beef cubes maybe some soup bones and not from cooked meat. Making soup is magic.

You can used already cooked meat, as long as you have stock. I use leftovers, and Kitchen Essentials stock to make great soup with soba noodles, and other soups.

@ jerzee I was wondering about the meat being already cooked. I do have beef stock, so maybe I could use mares idea or do you think I should just give it up and make sandwiches? LOL I just really wanted some soup today.

I love making soups, stews and curries with left overs and there's always a way. If you don't have great stock, one trick is to buy some dried mushrooms. When you reconstitute them you get both great tasting mushrooms but also the mushroom water is a great stock. You just need to strain it through a cheese cloth. If this doesn't get you enough stock for soup then you can supplement with good organic beef stock (available at any decent market).

You have beef stock so sautee some carrots, onions, celery till soft. Add the stock and then simmer 30 min. add your cut up meat and season as you like, oregano, basil, pepper maybe a bayleaf if you have any. I would also add some diced tomatoes if available. Cook up some barley or rice if you have any and add when soup is finished.

For each pound of meat you have, you could also cut up an onion, a big carrot and 2 ribs of celery and place 'em in a roasting pan. Coat and stir with a little oil. Roast at 400 degrees about 45 minutes or until the edges of the veggies turn brown. Place the roasted veggies in a ginormous pot with the beef, bring to a boil and then simmer for as long as you can - simmering very slowly. Strain this and you'll have wonderful stock with which you can proceed to make soup. If you reserve a bit of the beef you can add it to your soup. The beef that's been made into stock is only good for pet food.

For beef vegetable soup I use big fat onions, celery, carrots, and a bit of tomato. Dice all and boil in stock till cooked. Sometimes a bit of cabbage added after the other veggies start to cook is a nice variation.

You can make a soup with stock and cooked meat and it can be very nice but the making soup is magic from raw meat to steamy soup. Please try it sometime.
