Snow crab and mixed salad greens in search of dressing!
So I have snow crab and salad greens sitting on my kitchen counter. But now I need an appropriate dressing.
My first thought was butter and citrus (all we have is fresh oranges, actually), salt and a little cracked pepper.
But the thought of that greasy melted butter is starting to make me queasy. Is there another, less cloying fat to use? Better yet, any other dressing ideas?
Help me Serious Eaters, you're my only hope!

for me it's either x virgin olive oil and lemon -- or perhaps something asian....

Olive oil and citrus! Like @pooch, I'd use lemon juice rather than orange, just because I like the acidity. I would also add a bit of minced parsley, or chives, or dill - depending on your preferences. It's light and works well with both greens and seafood.

you could also try untoasted sesame oil and a splash of light soy sauce along with the citrus for an asian flavor like pooch suggested.

Actually, I wouldn't even worry about dressing that. Squeeze a little lime or add broken orange slices, fresh ground pepper, and a bit of Hawaiian salt sounds good to me! You're making me want to go out and get some avocados and crab!

This is the perfect dish for a light olive oil with both lemon zest and juice also chopped parsley. I think simplicity is best.

You could also serve it with a traditional Louis dressing: chilli sauce, mayo, Tabasco and lemon juice.
