Serious Efforts: Knish me, please!

I have recently found out what a knish actually is and would like to try to make them. I live in DC, and there are few deli's, shops, etc. that serve them....so I figured I would give them a try myself.
I am not Jewish and therefore don't have a fabulous family recipe to follow or a Jewish grandmother to assist me, but I am of Eastern European descent, so maybe I can bank on that for some luck!
Any ideas/thoughts/recipes/recommendations? Is this even a good idea?

what kind of knishes do you want to make? i can probably help you with a yeast dough baked knish, which is what my grandmother used to make. i've made them a few times using chopped chicken livers as a filling. let me know.

@cybercita - I don't know about @decemberain27, but I would love to have your grandmother's recipe! Please?

Regarding Knishes - it's a Jewish / Yiddish / Eastern European snack food. Kind of like a Yiddush wonton, or a small empanada. However the comparisons don't do them justice. Closest I think is more like a gnocchi.

I've eaten many of them - some good and some really bad. Some very tasty but terribly unhealthy (with chicken fat and chopped livers).

However never made them (yet).

@cybercita - I, too, would love to have your grandmothers recipe! And to know about your chicken liver filling.

@cybercita: That sounds fantastic. Are they difficult to make? I am pretty much open to anything, I make something first according to recipe and then branch out from there (as I am sure a lot of people do!). But if you could send it along that would be great!
