Savory Cottage Cheese?

So, last night I made a chunky spicy tomato sauce with basil, carrots, thyme, onion, garlic, chili flakes and a splash of wine and cream.

Today, too lazy to make more pasta, I dumped about a third of a cup of cottage cheese into the reheated sauce, and it's magically delicious--given that I sometimes substitute cottage for ricotta in lasagna, I shouldn't ahve been surprised. Also, I have had paneer type cheese in savory Indian dishes, but never had it in other food types. I wonder Eaters, what other warm/savory concoctions for cottage cheese do you eat?

this is probably nothing new, but my mom and i eat cottage cheese on toast, sprinkled w fresh ground pepper, and usually a few slices of garden-fresh tomatoes. delicious!

I add fresh scallions, fresh basil and fresh cilantro to cottage cheese. Sometimes I will stuff the mixture into cherry tomatoes as a lovely summer hors d'oerve, but for the most part I just eat it like a side dish.

saute some onions in lots of butter, toss that and some room temp. cottage cheese in a pot of drained, buttered hot egg noodles....
my mom always made this for dinner. good with lots of freshly ground black pepper....

I guess this might not be savory, but I really like cottage cheese pancakes!

I usually eat mine with pepper, tomatoes and cheese crackers.

I love adding pepper and parmesan cheese! Mmmm!! (on the sweet-side, I love cinnamon and Splenda!)

Cottage cheese is great on a baked potato with salt and lots of pepper.

Cottage cheese pancakes are awesome! Also, cottage cheese+sour cream for stuffed french toast or blintz fillings is great too.

Oh! and another thing I love to do is to puree it until smooth and add some herbs and spices and use it as a dip or in place of butter on a sandwich.

I melt a tiny bit of cheese (mozz, cheddar, whatever I have) on melba toasts, top with a small blob of cottage cheese and season with tons of pepper, oregano and crushed red pepper. Also good with a smidge of tomato on top.

I was unaware people ate cottage cheese in sweet variations until they came out with those "cottage doubles" that came w/a sidecar of fruit. I grew up eating it w/crackers or on toast w/tomatoes & black pepper (personal fave). Don't yell, but it's awesome scooped up w/Fritos/Doritos. I think it makes a good dip base, but there are many that have an aversion to the texture, so you could always blend it.

blend with feta, garlic, oregano, salt, pepper, and chopped kalamata olives. Serve with pita chips, sliced cukes...yum.

Nothing new here, but cottage cheese with salt and pepper is a delish breakfast!

I like to puree cottage cheese with roasted bell pepper, sour cream, garlic and whatever herbs I feel like for a nice dip for veggies in the summer.

Wow! These are great responses. Thanks so much Eaters. I had always sort of put cottage cheese=sweet and cold in my head. But the dips and the simple savory applications all look so fabulous.

It's such good protein. I'll be happy to work more into my diet.

Pumpernickel croustini with cottage cheese, pesto and some green onion...thats good too

One of my all time favorites is cottage cheese and creamed spinach on a baked potato. It's so good.

I've recently fallen for cottage cheese and salsa put into the middle of an avocado - mix and enjoy! Kind of like a deconstructed guacamole.

A bakery I once worked at made a fabulous onion rye. The owners always used to spread cottage cheese on a slice for a snack during the day. Yumm.

@gtick: I felt the same way! I had no clue about sweet cottage cheese with fruit until I saw those.

I personally just love it plain. Or on a lettuce salad with ranch dressing. Not anything new, but my favorite ways.

My SIL will shake a bit of soy sauce over a bowl of cottage cheese and eat away.

I had a friend in college who would put cottage cheese on top of salads instead of dressing. If you have enough toppings (cheese, seeds, tomatoes, etc.) it's pretty tasty!

I use it in cheese sauces for pasta... lasagna, mac & Cheese, etc.

I never thought of cottage cheese as a sweet item, more savory or neutral like cream cheese or ricotta.

I like it plain, or with cracked pepper, seasoned salt, or both.

Or with tomatoes.

I used to eat it with canned peaches, pears, or pineapple, but nowadays that's become fresh pineapple. But I don't really think of that as a sweet application. I'm more likely to eat something like that for breakfast or lunch, rather than a dessert.

And I use it in cooking and baking in the same ways I'd use ricotta or similar cheeses.

I guess I've never seen the cottage cheese things with fruit. Not that I'd buy it. Yet another convenience food that puzzles me.

Nobody's yet mentioned cottage cheese with horseradish and dill, used as a relish. I first had this at The Dog Team Inn in Middlebury, Vermont. They use a *lot* of horseradish. I use 2 Tbs. to a tub of cottage cheese (pref. large curd). Plenty of fresh dill. Freshly ground pepper, and a little salt.

I like my cottage cheese as is, or spread on a tasty cracker.

I saw this topic and thought "Ooh, I should buy some cottage cheese and try some of these things." Well, I bought it. And then I grabbed a spoon and ate all 24 oz of it before I had a chance to try any recipes. Oh well, maybe next time.

Cottage cheese, garlic and lots of dill...yummm~

I love cottage cheese. Our friends when we were young always thought we were strange for loving it. My favorite way is with finely chopped chives and s&p! I first had it this way when they served it to us at the King's Arm's Tavern in Williamsburg (think 1980's) and we were so impressed that a "fancy" (for 8 year olds) place would serve cottage cheese!

However, I never....ever...eat it "sweet".
