Salsa Verde Potato Salad
I need to make a potato salad tomorrow using salsa verde as a dressing. I'm looking for some add-ins to create a little bit of texture, but still keeping it very simple. I'm thinking a little crisped chorizo? I love the crunch of celery, but I think it will overwhelm the tomatillos. Any suggestions?

onions? and this may sound weird but red grapes in a potato salad are delicious. not sure if it will go with a salsa verde tho - try a little bit.

Cucumbers, red onions, grape tomatoes, maybe radishes. Avocados would add some nice creaminess. Corn kernels could be nice pops.

Green, red and yellow bell peppers. No heat added, but they add nice color and crunch. Corn would work, too.

Chorizo is going to make it a meat dish so you might want to think about that.
I think a dice of red onion, maybe some diced poblano or red bell (or both) but not much more than that :D.

Thanks for the input. It doesn't have to be vegetarian, so I'm still considering the chorizo. Right now, I'm leaning towards the chorizo, jicama, scallions, queso fresco, and cilantro. Yum?

if your salsa verde doesn't have capers, i'd add in some capers... otherwise i'd keep it simple.... since the salsa verde (assuming it has anchovies in it) is a pretty strong flavor..... red onion or scallions - definitely. maybe the chorizo would be good in there.... sounded good to me at first ... so i'd say YES to chorizo.....
well, live and learn, try it out and it may become a favorite.....
