Quick vegetarian Recipe?

Can anyone suggest me a quick and easy-to-do vegetarian recipe?

Welcome! We have plenty of highly talented vegetarian members here - I'm an omnivore, but I'll start off by asking if you (and those for whom you are cooking) are into legumes like chickpeas? That could make a difference in what I would suggest. If you and your guests are into that, I'd suggest a chick pea curry (using canned chick peas, although I prefer to rehydrate dry ones and cook them myself, this is NOT a speedy process!) served over couscous cooked in a veggie broth and maybe green beans or peas or roasted peppers on the side. If you're not into beans, then I lean towards a veggie pasta dish - either a cheese and spinach stuffed pasta (you could purchase this from your local store fresh) with a bright tomato cream or tomato pesto sauce with bread and a nice salad.

Do you need a several item meal or will one-dish do it? Are you just hunry yourself and wanting something simple or expecting others and new to cooking for veggies?

I keep a bunch of Mexican-like ingredients in the house at all times: avocado, tortillas, canned black beans, salsa, cheese - these can be combined and prepared any number of ways, per your imagination; no recipe required.

Avocado "Tacos"-

Sliced avocado (sprinkle with a little salt and lime juice)
Homemade pico de gallo
grated cheese
sour cream
Warm a flour or corn tortliia and fill with above ingredients in any quantity or combo you like.
You can also add anything else you like, beans, lettuce, eggs... possibilities are endless.

Another easy one is just any pasta with a good homemade marinara, parm reg and crusty garlic bread.

Do you like tofu?

Chickpea and tomato simmer:

Fry up some onions and garlic. Add a can of diced tomato's (with liquid), a can of chickpeas, paprika, hot pepper flakes, salt, and pepper. Let simmer until desired consistency (or add some lentils to reduce liquid quickly). If you happen to have some, throw in some spinach at the last minute. Serve hot over rice or some pasta.

I eat this all the time because it's quick and cheap: Mix half a stick of room temperature butter with four tablespoons of Dijon mustard. To that, add a clove of minced garlic and a couple of tablespoons of minced herbs, whatever kind you like; I prefer chives and flat leaf parsley.

Boil one pound of any kind of pasta you have on hand. When it's nearly al dente, throw in three cups of fresh broccoli florets. Let it boil with the pasta until the pasta is al dente. Drain it all off, toss in the butter mustard mixture until well combined. Then season with kosher salt and freshly ground black pepper. This is around the time I throw in a crap load of freshly grated Parmesan too, but if that's not your deal you don't have to.

Btw I should add that one of my favorite and easiest vegetarian recipes is this: make a box of macaroni and cheese and then at the end mix in Amy's Medium Spiced Vegetarian Chili (canned) with a dash of salt. The combination is heavenly comfort food and quick quick quick.

I am defintiely not a vegetarian, but made a really tasty vegetarian (and vegan!) dish a few days ago: Spicy Eggplant with Cous Cous.

Doesn't get much quicker or easier than stir fry. Chop up veggies and tofu, heat them in a pan with some olive oil and soy/teriyaki/etc sauce, and throw them over rice or pasta. Maybe throw some nuts or seeds on top if you want.

Another really, really quick and easy one I used to do in college was pour some olive oil on a bowl of pasta, and then add garlic, parmesan cheese, and pine nuts to taste.

my favorite sandwich is veg..

nice crust loaf of bread, buttered on each side, smoked gouda, and a relish of a head of flat leaf parsely chopped, two cloves of garlic minced, one seeded roma tomato, chopped, a glug of olive oil, salt and pepper. yum!
