Manhattan's most emblematic meals for a tourist

I'm a college student in Mexico and I am making a 5 day trip to NYC next spring. As the organizer, I would like to arrive with enough eating options, especially for lunch and dinner, considering as a student I'n on a budget, but willing to pay for remarkable and memorable food.

I would like to get some recommendations for a hamburger spot (I'm thinking Shake Shack), some mid-eastern food (I've never had falafel), some great pizza (sick and tired of chain pizzerias), a cheap and great sandwich shop, some sushi or japanese food... anyway, I know I might be asking for a lot, but any recommendation will me greatly appreciated.
