How do you make your egg salad, tuna salad, ham salad...
Any other of "those types" of salads? The usual celery, onion, herbs, mayo and S&P, or do you have a fresh recipe to share?

I make them fairly traditionally but almost always throw in a spoonful of prepared horseradish (not the pink one! heh). It perks everything right up!

Egg Salad - I use half and half Hellman's and Kewpie, minced scallion and a shot of shoyu. Or sometimes I use the same mayo thing, no shoyu, minced onion and celery and some halved pimento stuffed olives. I think I am probably the only person on the planet who likes it that way. Oh, some shaved parm is great on top of the salad in a sandwich, which I always eat on either rye or 8 grain bread.
My tuna is boring beyond words (just the way I like it) - hellman's, lemon juice, lots of minced celery and a little minced onion.
I hate, hate, hate ham salad.

You could add a bunch of different things. I use shallots instead of onions for most salads. In chicken, egg or salad I've tried adding, curry powder, sriracha, worcestershire sauce, old bay seasoning, tamazula, english mustard, horseradish, dark soy sauce, wasabi, dijon mustard, roasted garlic, confit onions... Anything that can give it some extra zing. Just try whatever is on hand and see what happens.

I add some Italian dressing, nuts, chopped apples, and some dried cranberries with mayo of course, to my chicken and tuna salads.

You may want to check out these ideas from past threads: egg salad, chicken & tuna salads, more chicken salad and potato salad.

I add Hellman's light mayo, celery and a dollop of Durkee's dressing/sauce. Also add these same ingredients to chicken salad, and potato salad.

I really wish we could edit these things. The word "tuna" is missing from that third sentence. " In chicken, egg or tuna salad..."

tuna salad is can all white meat tuna, onion, celery (small dice). Mayo, mustard, salt pepper, mrs. dash. Secret ingredient: a huge spoonful of dill pickle relish. the best
lkong at 11:40AM on 02/11/09
My tuna salad is pretty boring...tuna, mayo, and a spoonful or two of pickle relish.
jmfors at 11:42AM on 02/11/09
These days, when I make macaroni or potato salad, I use crab, kosher dill pickles or cucumbers, boiled eggs (separate white from yolk), some freshly ground black pepper, a dash of shichimi togarashi, scant amount of yellow mustard, a dash of shoyu, sprinkle of Tony Chachere's creole seasoning, and Hellman's mayonnaise.
Cassaendra at 11:50AM on 02/11/09
@Cassaendra - I love Tony C's! It's such a staple in my cooking that I don't know what I'd do without it. :-)

Miracle Whip.
I don't care what you think, I like Miracle Whip. I mostly make tuna and chicken salad. I always put tomatoes in it and when available celery, green pepper, chopped pickles (dill or bread and butter or both) or store bought relish, sometimes cheese, bacon, onion (if my wife is eating any of it) corn relish.

Can I say, I've never tasted ham salad? It's not part of my family's stable of foods, and the already-packaged stuff looks scary. Any ham salad lovers out there, or shouldn't I bother?
BangieB at 11:58AM on 02/11/09
@BangieB- I love ham salad, makes a nice sandwich on good rye bread. My recipe is very simple, chopped ham, mayo,a little bit of chopped onion, a dab of mustard and lots of fresh ground black pepper.
dmcavanagh at 12:08PM on 02/11/09
I like all of those ingredients, so there's no reason I wouldn't love this too. Thanks, dmcavanaugh!
BangieB at 12:12PM on 02/11/09
@BangieB-enjoy, and I also add some Swiss cheese to that sandwich.
dmcavanagh at 12:28PM on 02/11/09
Grew up with "ham" salad made with bologna, and it works well. The only so-called "secret" tip I have came from a delicatessen owner hereabouts, who says just a tiny pinch of onion powder in any such dish. Just gives a little extra push of flavor.

Tuna salad, same old boring mayo, celery, salt and pepper.
Chicken salad however has gotten tasty in here since dd took over.
She adds mayo, celery, and lots of shaved asiago cheese to the mix.
Delicious.

I made this one today and liked it. It is a small batch because it was an experiment.
1/2 cup diced, saute'd chicken
1 chopped hard boiled egg
4-5 sliced cherry tomatoes
A slice of onion diced
A dollop of Hellman's mayo
A dollop of cottage cheese
1 tablespoon Kraft caesar vinigrette with parmesan dressing
Dash of sea salt and fresh ground pepper
It was a change from my usual and it turned out to be good.

Chicken salad depends on whether I'm using canned or roasted. Sometimes I like adding walnuts, apples, grapes and red onions. Other times I go with olives, tomatoes. Regardless, mayo is the key :)
Here is an idea for a Russian Tuna Salad...you make it with tuna, eggs, mayo and cooked white rice.
orchidgirl at 2:58PM on 02/11/09
Ham salad, for me, starts with leftover diced baked ham and then adding diced celery, pinch of garlic powder, Hellman's, dijon mustard, a little dill relish (or dill pickels chopped fine) and S&P to taste. Served on either good rye bread or a good kaiser roll.
I guess you could add any other goodies that you like with baked ham - well, maybe not jelly beans!). I never make it with deli bought ham - just doesn't taste the same.
duncan1205 at 3:15PM on 02/11/09
Chicken salad: celery, grapes or apples, curry powder, roasted garlic, Hellman's, pimiento-stuffed olives, S&P
Tuna: Hellman's, apples, chopped dill pickles or a big spoonful of dill relish, sunflower seeds, S&P.
Sometimes I make a chickpea salad with mayo, curry powder, grapes and S&P.
All get eaten straight or on crackers. I don't like them on sandwiches so much.

Tuna salad- tuna (of course), mayo, cream cheese, celery, and pickles (sweet or sour if I have them around).
Egg salad- eggs, mayo, dry or liquid mustard, sweet pickles, pepper, tabasco sauce, paprika, bacon (if I have it)
Ham salad- mayo, cream cheese, pickles (sweet or sour), celery.
pjracz10 at 4:22PM on 02/11/09
Here are all my basic ones:
Tuna: Hard boiled egg, mayo, maybe a little onion, Old bay- no other seasonings required
Chicken: Celery, Mayo, salt, pepper, onion/garlic powder, parsley if its around
Ham: Mustard & mayo in equal amounts, a little salt, pepper, fine chopped celery, onion, and pickles.
Egg: Mayo and mustard, old bay, salt pepper
I Love sandwiches :)

I made "salad" the other day. It was one of those kitchen sink recipes. I had leftover trout that I had baked in chimichurri sauce. I added TJ's mustard aoili which is just fancy mustard and mayo. I added some pickle relish, bell pepper, shallots, salt and pepper. Oh and a little yogurt. I was out of celery. And some hot sauce to top it off with some tostadas.

My favorite tuna salad is solid albacore, cannelini beans, halved grape tomatoes, capers, arugula, olive oil, red wine vinegar, salt, and lots of pepper. I've been known to stick all sorts of leftovers in my tuna salad, but that is my standby. I often make chicken salad with chicken that I poach in a little stock, white wine, and herbs, then toss with a little mayo, whole grain mustard, lemon juice, salt and pepper, and lots of fresh chopped herbs (dill is a favorite).
The bf's Midwestern family swears by a ham salad recipe using 3 parts pressed deli ham, 1 part bologna, dill pickle, and lots of Miracle Whip. Not my cup of tea, but it's such a treat for him on some smushy white bread.
nosillak at 6:24PM on 02/11/09
I make the salads with all the standard ingredients; Hellman's mayonnaise, celery, onion, tuna/egg/potato and then I add some chopped up pickled jalapenos and chopped cilantro to them. It really adds some zip to the salads.
dawnie2u at 7:39PM on 02/11/09
does cole slaw count? that's another mayo-based "salady" thing. i just saw a re-run jamie at home where he made cole slaw with yogurt and fresh herbs and it looked amazing.
megannesta at 7:58PM on 02/11/09
I make my egg salad using hellman's mayo, a bit of chopped onion, s&p and some diced green olives with pimentos--the saltieness of the green olives gives the egg salad some zip!
Tuna salad--only solid white tuna, onions, celery, sometimes chopped egg, hellman's mayo, s&p and a little fresh sqeezed lemon juice.
Another version of my tuna--has canneloni beans, artichoke hearts, black olives, grape tomatoes, diced cukes, s&p, a good balsamic, olive oil and lemon juice....
Chicken salad--kinda like a waldorf salad-wth apples, shredded carrots, raisins, a mild white onion and a mayo sour cream dressing and s&p to taste...
Never had ham salad so I can't say..
