Help Finding a Traditional Moroccan Dish

I am working on a presentation on Morocco, and would love to make/try some traditional dishes. Can anyone direct me towards one that isn't too difficult or complicated to make? I would particularly love one which can be served cold, but I am open to anything.

My sister lived in Morocco and one dish she used to make is called besteeya (sp?). it's an egg pie with pigeon (she used chicken) and cinnamon in a fillo crust. It's savory and tastes amazing.

Hi, Melissa. My grandmother grew up in Casablanca, and if you want something traditional and cold, I'd go with a Moroccan carrot salad. You can either use a vegetable peeler to peel ribbons from the carrots (the fancy, modern way), or cut them into thick pennies and blanch them (the traditional way). Make a dressing with olive oil, lemon juice, parsley/cilantro, and (the secret ingredient) cumin. It's very iconic. If you want an honest recipe, as opposed to just this description, I'm sure you could Google "Moroccan Carrot Salad" and a bunch would come up. Good luck!

paula wolfert's cookbook "couscous and other good things from morrocco" has many wonderful recipes. unfortunately much moroccan food is labor intensive. the carrot salad kerry recommends is probably the easiest. i've made her recipe for b'stilla many times. it's wonderful, but very complicated, with lots of steps.

Tabouleh is a great dish that is often associated with Moroccan cuisine. It is extremely easy to make, tastes delicious, and is great for you. It's basically a parsley salad with lemon juice, tomato, and some minced garlic. You can eat it right away or put it on flatbread and make small wraps. There's a great recipe up on the Food Network site.
