Gourmet Style Chocolate Chip Cookies anyone?
Does anyone have a recipe for thick, chewy chocolate chip cookies, like those hefty ones sold at Mrs. Field's?

My SIL and I made these last night. Neiman Marcus Urban Legend Cookies. I think they very closely resemble the type of thick-ish rich cooky you need. I will say they're a little closer to crunchy than chewy but slightly underbaking them might give you chewier results. It's a strange recipe as they are baked for 20 minutes at 300 degrees. Outstanding flavor.

I don't have the recipe, but my Mom used to make a recipe that was supposedly the Mrs. Field's cookie and the secret ingredient was oatmeal that got pulverized in the food processor. Tasty!

substituting bread flour for the AP flour makes the cookies chewier, too.

The NYT Dining pages did a article recently about the quest for the "perfect" chocolate chop cookie The trick/secret (not so secret when it's in the NYT), according to the article, is to chill the dough for 24-36 hours before baking. There is a recipe from Jacque Torres too.

I recommend one of Alton Brown's recipes - either "The Chewy" or "The Puffy." I've never made The Chewy, but The Puffy is one of my favorite chocolate chip cookie recipes....and like you, I also like thick, chewy cookies. The substitution of cake flour for AP flour is key, as is using shortening in place of butter, and chilling the dough so that it doesn't spread while baking. Both of those recipes can be found on the Food Network website. I've also heard that adding a box of instant pudding (vanilla or chocolate) creates soft, chewy cookies, but I've never tried that myself. I'm sure it wouldn't be that hard to find a recipe using that, though...

I've never had a "bad" chocolate chip cookie, some are just better than others:-)

Thanks for all the helpful responses! Will implement/experiment with the suggestions. I actually tried Alton Brown's recipe but used regular flour and not bread flour as stated. Cookies tasted good but did not have the appearance I was looking for. Will also chill the dough for at least 6 hours next time.
