flax seed bread recipe

I'm trying to watch my carbs these days but was jonesing for some kind of bread .... so I tried this recipe and it's pretty good.

Flax Seed Bread

2 cups of flax seed meal (I use Bob's Red Mill organic)
1 TBS baking powder
1 tsp salt
5 eggs
1/2 cup water
1/3 cup oil (I used olive)

1. By hand, mix dry ingredients. Mix wet ingredients. Mix together. Let it sit for 3 minutes.

2. Spread batter into a rectangle on an oiled parchment cookie sheet. bake 350 degrees for 20 to 25 minutes.

It doesn't rise, it's kind of flat, like a focaccia-style bread. So I sliced it in half horizontally and had it with strawberry butter. Very, very low carb. And tasty.

I'm going to try and modify for a pizza crust attempt. We'll see how it goes.

there's a flax seed pizza crust recipe on about.com? i think that's the name of the site - in the low carb section....
