Dry Marsala?
I have several recipes that ask for Marsala wine. What brand is best? I bought one labeled simply 'Marsala" at the market - it was awful.
I've tried using a good white Chablis - I'm not sure if I'm getting the right outcome for the dish.

I use Sperone and I love it - I'm a huge fan of veal and chicken marsala..... I live in Canada so I'm limited as where I can buy alcohol, but I got this in my local LCBO (government run liquor store). I did have to ask for it tho - they had in the back room.

Oh and I would add that Marsala has a completely unique flavour - I have never found anything that tastes like it and I wouldn't substitute. I'd make another dish if I didn't have the Marsala.

Isn't it a fortified wine?

Thanks for the brand name. I live in California so we have beverage stores. I'll ask there.

I've used a dry sherry in a pinch.

Ack. My brain cannot remember the brand I usually use....but I know I pay less than $8 a bottle for it and it is pretty good-
but I agree that when a recipe calls for marsala, nothing else will sub the same. It really does have a distinctive taste.

I did find a DRY Marsala at the beverage store yesterday - Florio - only one that they had that wasn't noted on the tag description as a dessert wine. It was $ 11.00. at Bev-Mo
Chicken Marsala is on the menu this evening. Fingers crossed.
